Crostata Ricotta and Chocolate Recipe

A crostata is an Italian baked tart or pie. I made a chocolate pastry and fill it with ricotta and chocolate chunks. You can make it plain pastry with different fillings like jam, nutella etc.

Ingredients

For chocolate pastry list 1.

  • Butter 225 g
  • Flour 450 g
  • Coco powder  45 g
  • Icing sugar 195 g
  • Egg yolks  5

For Ricotta filling list 2.

  • Ricotta  750 g
  • Caster sugar  100 g
  • Egg  1
  • Vanilla pod  1 or use vanilla essence 1 tsp
  • Dark Chocolate bar  100 g

For Chocolate Pastry

In a bowl mix coco powder,flour and icing sugar from list 1.

Put chilled butter and with a paddle attachment run the mixer until you get fine crumbs.

Your flour should look like this.

Add in 5 egg yolks, mix with hand. Add 2-3 tbsp water if needed and form it into a ball.

Do not knead it. Just mix it until it comes together.

Cover with a clingfilm and chill for half hour in the fridge.

Take almost half pastry. Roll it and layer it into a 9 inch pastry tin.

Cut the edges

Blind bake in a preheated oven at 180 C for 30 minutes.

Take out brush with egg white and bake further for 15 minutes or until it cook nicely.

Chocolate pastry is done. Set it a side.

For Ricotta Filling

Now in a bowl Add ricotta , egg, vanilla and sugar from list 2.

Beat it until mix

Add in chopped chocolate and fold it.

Fill it in the pastry case.

Roll the remaining pastry dough and cut into thin strips. Chill it before layering it on to crostata.

Layer all strips like shown in picture.

Final look should be like this.

Now bake it in a preheated oven at 180 C for almost 30 minutes or until top is crisp. Take out from the pan when its cool and smooth the edges.

Cut it when it is nicely chilled.
