Curry Roast

Curry Roast Recipe 

Curry Roast is chicken roast recipe with some gravy in it. That is why I named it curry roast because it is roast and curry at same time. You can serve it with salad, rice or naan and yogurt dip. Or just serve the chicken pieces with roasted potatoes.

Few days ago I invited some of my friends at my place for lunch. I really wanted to sit and enjoy with them so I thought of a menu that I can make a ahead a day before but also that should be good enough with full of flavors. I made 3 curries, rice, chops, salad and I wanted to make a chicken roast so I made this curry roast. Cleaned every thing and I was ready to enjoy with them.

I was thinking what should I make then this idea came into my mind. The inspiration is Pakistani wedding roasts recipe, they fry chicken then cook it slowly with marination. I made it a little different than that. I made this roast a day before the lunch and keep in fridge in the same pan in which I cooked it. Before serving I reheat it in same pan and done :). Like other roasted chicken recipes it will not become dry the other day when you reheat it because it has gravy in it that will save it from getting dry and you will serve a fresh flavor chicken any time.My guests and family loved it. So do try and enjoy your parties.

The best part of this recipe is you can make it in big quantity with out a mistake because recipe has just 2 steps. Just make sure not to stir the chicken too much after it is cooked because that will break it.

Ingredients

List 1,

  • Chicken drumsticks  1 kg
  • Oil  1/4 cup

List 2,

  • Yogurt  4 tbsp heaped
  • Ginger garlic chopped  1 tbsp
  • Red chili flakes  1/2 tsp
  • Kashmiri red chili powder  1 tsp
  • Turmeric powder  1/2 tsp
  • Cumin powder  2 tsp
  • Coriander powder  2 tsp
  • Ketchup  2 tbsp
  • Worcester sauce  2 tbsp
  • Soy sauce  2 tbsp
  • White vinegar  2 tbsp
  • Salt  1 tsp or as required

Mix all list 2 ingredients in a bowl. Set a side.

Heat 1/4 cup oil in a pan. Add 1 kg chicken legs or any pieces you have in it. Make sure to use big pieces of chicken in it.

Cook on high heat for almost 10 minutes or until you see light colour on them.

Now add in all the marination we made above.

Stir and cook for 2 minutes.

Place a lid on it and turn the heat very low. Cook it with out toughing it for 30 minutes almost.

Curry roast is ready. You can see it has a little thick gravy in it. You can serve it with or with out this.
Just make sure not to stir it after it is cooked, because that will break the chicken pieces.
