Massaman Curry Recipe

Massaman curry is a rich, a little mild Thai curry. Cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg and mace are combined with local produce such as dried chili peppers, cilantro seeds, lemongrass, galangal, white pepper, shrimp paste, shallots and garlic to make the massaman curry paste.

I am making lamb massaman curry with ready made paste. You can use any brand massaman curry paste.

Ingredients

  • Lamb boneless  400 g
  • Massaman curry paste  2-1/2 tbsp
  • Fish sauce 1/2 tbsp
  • Oil  1 tbsp
  • Potatoes  2
  • Onion  1
  • Roasted peanuts  1/4 cup
  • Fresh red chili  1
  • Fresh coriander for garnish

List 2,

  • Coconut milk  400 g
  • Coconut cream  150 g
  • Tamarind paste  2 tbsp
  • Brown sugar  1/2 tbsp
  • Small cardamom pods  4
  • Cinnamon stick 1 small

In a pan add 1 tbsp oil and meat.

Stir it 4-5 minutes.

Add in coconut milk

Cook until meat is nicely tender for almost 1 hour.

In a pan add coconut cream, massaman curry paste and all list 2 ingredients.

Mix and cook for 1 minute.

In cooked meat add potatoes,onion cubes and cooked paste.

Mix and cook for 15-20 minutes. Taste salt.
