Anarkali Biryani

Serving = 4-5 persons

Ingredients,

List 1   (Whole Garam Masala)
  • Big cardamom   4-5
  • small cardamom  4-5
  • cloves  6-8
  • cinnamon sticks 1-2
  • bay leave  2-3
  • black pepper corns  8-9
List 2 (For rice boiling)
  • rice  500 gm
  • cinnamon stick  1
  • whole cumin  1 tbsp
  • bay leave  1-2
  • salt 4 tsp or as required
List 3 (For chicken marination)
  • Chicken boneless cubes   450gm
  • salt  3/4 tsp or as required
  • ginger paste  1/2 tsp
  • garlic paste  1/2 tsp
  • red food colour  1 tsp
  • red chili powder  1 tsp (use kashmiri red chili if you have)
  • turmeric powder  1/2 tsp
  • cumin powder  1 tsp
  • lemon juice  1 tbsp
List 4 (For gravy)
  • onion   2 medium
  • tomato  3 small
  • ginger finely chopped  1 tbsp
  • garlic finely chopped  1 tbsp
  • oil+ ghee  3/4 cup  (you can use 1 or use both mix ,its your choice)(or you can also use desi ghee)
  • yogurt  250 gm
  • red chili powder  1-1/2 tbsp
  • cumin powder  1 tsp
  • turmeric powder 1 tsp
  • salt 1 tsp or as required
  • nutmeg and mace powder  1/4 tsp
List 5 (For layering or Dum)
  • Kewra water  2 tbsp
  • desi ghee or butter  2 tbsp heaped
  • coriander chopped  1/2 cup
  • mint  chopped  1/4 cup
  • almonds    20 gm
  • pistachio   20 gm
  • pomegranate seeds powder  1 tbsp (anardana powder )
  • Dried plums  6-7

Directions,

1. Take skinless almonds and pistachios , roast them with 1 tbsp oil..set a side we will use them in end rice layering.

1.Soak 500 gm rice for 30 minutes. Take skinless almonds and pistachios , roast them with 1 tbsp oil..set a side we will use them in end rice layering.
2. Take all list 2 chicken with marination ingredients, marinate it for 5 minutes, now with 2 tbsp oil cook it in a wok for 12-15 minutes on medium to high heat until chicken is tender.

2. Take all list 3  chicken with marination ingredients, marinate it for 5 minutes, now with 2 tbsp oil cook it in a wok for 12-15 minutes on medium to high heat until chicken is tender. set it aside.
3. now for gravy take a big pan, add all list 1 whole garam masala with 3/4 cup oil+ghee, let it cook until it starts to crackle... then add ginger finely chopped 1 tbsp and garlic finely chopped 1 tbsp, stir for 5 seconds then immediately add onion and cook them on medium heat until onion are slightly brown. this is the main process of this anarkali biryani, it will give biryani its taste and aroma.

let it cook until it starts to crackle… then add ginger finely chopped 1 tbsp and garlic finely chopped 1 tbsp, stir for 5 seconds then immediately add onion and cook them on medium heat until onion are slightly brown.
this is the main process of this anarkali biryani, it will give biryani its taste and aroma.
4. when you see onion starts to brown, add 1 tbsp whole cumin and stir for 15 seconds, don't burn the spices.

5. Now add finely slice tomato,stir until tender. 6. then add 1-1/2 tbsp red chili powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp salt. stir until mix . 7. Cook it until you see oil with the sides of the pan. now turn off the heat. 8. Now add nutmeg and mace powder 1/4 tsp, yogurt 250 gm mix in 1/2 cup water, and stir it continuously then turn on the heat and cook for 3-4 minutes on medium heat.  i turn off the heat at that time because i don't want to curdle the yogurt. so now turn off the heat and set it a side.

5. Now add finely slice tomato,stir until tender.
6. then add 1-1/2 tbsp red chili powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp salt. stir until mix .
7. Cook it until you see oil with the sides of the pan. now turn off the heat.
8. Now add nutmeg and mace powder 1/4 tsp, yogurt 250 gm mix in 1/2 cup water, and stir it continuously then turn on the heat and cook for 3-4 minutes on medium heat.
i turn off the heat at that time because i don’t want to curdle the yogurt.
so now turn off the heat again.
10. Now layer chicken we made before on the gravy.

10. Add chopped fresh coriander and mint with dried plum and 1 tbsp dried pomegranate powder(anardana powder)

11.while you are making gravy, Boil water with all list 2 ingredients, except rice... when water starts to boil add soaked rice and let it cook until 40% cooked.

12. Take out half rice with a big spoon, layer them on gravy and chicken, add roasted nuts on it we made in beginning.

now cook remaining rice until 70% done. strain them and layer them on 1st batch of rice. add 2 tbsp kewra water on top and add 2 tbsp heaped desi ghee or butter on top. turn on the heat on high with lid on.

after 1 minute when you see steam coming out of the pan, turn the heat low and cook it for 10 minutes on low heat.
