Ingredients,
List 1 (Whole Garam Masala)
- Big cardamom 4-5
- small cardamom 4-5
- cloves 6-8
- cinnamon sticks 1-2
- bay leave 2-3
- black pepper corns 8-9
List 2 (For rice boiling)
- rice 500 gm
- cinnamon stick 1
- whole cumin 1 tbsp
- bay leave 1-2
- salt 4 tsp or as required
List 3 (For chicken marination)
- Chicken boneless cubes 450gm
- salt 3/4 tsp or as required
- ginger paste 1/2 tsp
- garlic paste 1/2 tsp
- red food colour 1 tsp
- red chili powder 1 tsp (use kashmiri red chili if you have)
- turmeric powder 1/2 tsp
- cumin powder 1 tsp
- lemon juice 1 tbsp
List 4 (For gravy)
- onion 2 medium
- tomato 3 small
- ginger finely chopped 1 tbsp
- garlic finely chopped 1 tbsp
- oil+ ghee 3/4 cup (you can use 1 or use both mix ,its your choice)(or you can also use desi ghee)
- yogurt 250 gm
- red chili powder 1-1/2 tbsp
- cumin powder 1 tsp
- turmeric powder 1 tsp
- salt 1 tsp or as required
- nutmeg and mace powder 1/4 tsp
List 5 (For layering or Dum)
- Kewra water 2 tbsp
- desi ghee or butter 2 tbsp heaped
- coriander chopped 1/2 cup
- mint chopped 1/4 cup
- almonds 20 gm
- pistachio 20 gm
- pomegranate seeds powder 1 tbsp (anardana powder )
- Dried plums 6-7

Directions,
let it cook until it starts to crackle… then add ginger finely chopped 1 tbsp and garlic finely chopped 1 tbsp, stir for 5 seconds then immediately add onion and cook them on medium heat until onion are slightly brown.
this is the main process of this anarkali biryani, it will give biryani its taste and aroma.
6. then add 1-1/2 tbsp red chili powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp salt. stir until mix .
7. Cook it until you see oil with the sides of the pan. now turn off the heat.
8. Now add nutmeg and mace powder 1/4 tsp, yogurt 250 gm mix in 1/2 cup water, and stir it continuously then turn on the heat and cook for 3-4 minutes on medium heat.
i turn off the heat at that time because i don’t want to curdle the yogurt.
so now turn off the heat again.
turn on the heat on high with lid on.
