A very traditional dish of Pakistan … Usually made with beef but today I am making them with mutton and the correct ratio is 1 cup channa dal in 1 kg meat…but I like more dal in my kebabs so adding 1 cup channa dal in 1/2 kg meat… I like it this way,you can add any quantity of channa dal of your choice …cooked meat with lentil and some boil potatoes in it…and lot of fresh coriander, mint,onions… give it lovely fresh flavors …so try it my way hope all of you like it 🙂
People mostly complain that their kebabs break while frying …so the trick of frying perfect kebabs is let them cook completely from 1 side first with out touching them then turn them…and they will not break.
Serving= makes about 28-30 shami Kebab
Ingredients,
List 1
- Boneless mutton/beef  500 g
- whole dry red chilies  7-8
- whole black pepper  2 tsp
- cloves … long….. 7-8
- ginger garlic paste  2 tbsp
List 2
- whole dry coriander….sokha dhanya…. Â 2 tbsp
- whole cumin ….zeera….. Â 1-1/2 tbsp
- salt  1 tsp
- turmeric powder  1/2 tsp
- Channa dal  1 cup (soaked for 1 hour)
List 3
- red chili powder  1 tsp
- garam masala powder  1 tsp
- fresh coriander chopped  1 cup
- fresh mint chopped  1/2 cup
- green chilies 2 Â chopped
- potatoes boiled  2 medium
- salt  1 tsp or as required
- egg  1-1/2
List 4
- onion  2 medium
- lemon juice  4 tbsp
Directions,
turn off the heat and let it cool.
1 thing is important in this your lentil (dal) should not mushy.
The trick of frying perfect kebabs is let them cook completely from 1 side first then turn them…and they will not break.
