Genoise is an Italian sponge cake. It is a light and delicate kind of sponge, traditionally served with fresh fruit and cream.It’s simple and you can make many different cakes with this sponge. Main ingredients are flour,eggs and sugar. I am making Chocolate flavour of this sponge today. You can fill it with any of your favorite filling.

Ingredients

  • Flour  100 g
  • Coco powder 25 g
  • Eggs  4
  • Caster Sugar   125 g
  • Vanilla extract  1 tsp
  • Butter  40 g

1. Grease and line 2 cake tins of 6 inch size.
Preheat your oven at 175 C.

2. Sieve flour and coco powder 2-3 times.

3. Melt butter, set a side.

4. Beat 4 room temperature eggs with sugar.

5. Beat until triple in volume. Then add vanilla extract and mix well.

6. Add in flour and coco mixture and fold in lightly.

Add in melted butter and keep folding lightly until mix.

Cake mixture is ready.

Pour the batter in 2 prepared tins evenly.

Bake at 175 C for 15-20 minutes. Take out and let them completely cool in tins.

Take out from tins and fill with your favorite filling.

After cooling I wrap them in clingfilm and keep on room temperature.
