Strawberries and Cream Genoise

A traditional light and delicate cake with cream and strawberries. My most favorite in all cakes. Love making it and love eating it. 

Sugar Syrup recipe : Sugar 1/2 cup + Water 3/4 cup : Microwave it 3 minutes : mix with a spoon let it cool.

Ingredients

List 1 for Sponge

  • Caster Sugar   125 g
  • Flour  125 g
  • Eggs  4 medium
  • Butter   40 g
  • Vanilla extract  1 tsp

List 2 other ingredients,

  • Fresh cream  600-700 g
  • Strawberries  250 g
  • Sugar+ water syrup  as required (Recipe above)

Grease and line with baking paper 2 cake pans of 6 × 4 inches size.
Preheat your oven at 175 C.

2. In a clean dry bowl of a cake mixer fitted with whisk attachment add in 4 room temperature eggs with caster sugar.

3. Beat until triple in volume and mixture should leave a trail when you lift the whisk. Add in vanilla and mix well.

4. Melt the butter in microwave. It should not very hot before adding into the mixture.

5. Sift the flour on the egg mixture.

5. Fold it with a whisk or spatula with very light hands. Do not over mix.

7. Add in melted butter.

8. Fold in nicely. Cake mixture is ready.

9. Fill the batter evenly between prepared cake tins. Bake at 175 C for 15 -20 minutes. Depending on your oven temperature.

10. Cakes are ready. Let them completely cool in the tins.

11. Take out from the tins.

Now whipped Cream

12. Now take chilled double cream...beat it

Add chilled double cream in a bowl. 
13. When its slightly thick add sifted icing sugar and vanilla essence...beat until stiff peaks.

Other Preparations

Wash and dry strawberries

Cut half in small cubes and other in half slices. Keep 3-4 whole.

Cut the sponges in half.

Cake Assembling

On the cake turning table keep your 8 inch round cake board. Place 1 layer of cake on it. Brush sugar syrup on it.

Layer whipped cream on it and place some strawberries on it.

Keep layering sponge+sugar syrup+strawberries

Cover the cake with whipped cream
