Mutton Stew

Serving = 4-5 persons

Ingredients, List 1

  • mutton with bones  500 gm
  • garam masala powder  1/2 tsp
  • red chili flakes  1/2 tsp (add more if you like spicy)
  • onion  500 gm
  • green chili 2-3  (add more if you like spicy)
  • garlic cloves  4-5
  • ginger  2 inch piece
  • yogurt 1/2 cup
  • salt  1 tsp
  • oil 1/2 cup
LIST 2 Whole garam masala
  • cinnamon stick (darcheni)   1
  • bay leaves  1-2
  • black pepper corns  1/2 tsp
  • cloves 4-5
  • big cardamom 2
  • whole red chilies  5

Directions,

1. Take onion slice them fine, take ginger and garlic ,chop them with knife, this is necessary in this type of mutton stew to chop them with knife for right texture and taste...cut green chilies in long slices. set a side.

Take a pan, add 1/4 cup oil with 500 gm mutton in it, stir and cook until all juices of mutton evaporates. 2. take all list 2 whole  garam maslas. 3. add these in mutton, stir on slow to medium heat for 15 seconds, don't burn the spices. 4. now add garam masala powder 1/2 tsp, stir for 5 seconds.

6. now add red chili flakes, stir for 5-10 seconds... i am adding all these spices 1 by 1 because i want the meat to get all these spices aroma and taste perfectly. 7. now add all vegetables we cut above. 8. stir and cook on medium to high heat for 2-3 minutes, until onion slightly changes their colour... but still they are white. 9. now mix 1/2 cup yogurt in 2 cups of water, add in , let it boil , now with lid on low heat cook it until meat is nicely tender... for almost 2 hours.

6. now add red chili flakes, stir for 5-10 seconds… i am adding all these spices 1 by 1 because i want the meat to get all these spices aroma and taste perfectly.
7. now add all vegetables we cut above.
8. stir and cook on medium to high heat for 2-3 minutes, until onion slightly changes their colour… but still they are white.
9. now mix 1/2 cup yogurt in 2 cups of water, add in with 1 tsp salt , let it boil , now with lid on low heat cook it until meat is nicely tender… for almost 2 hours.
10. after meat is nicely tender... turn the heat to high.
