Focaccia Recipe

Focaccia bread or Fougasse bread is a flat oven-baked Italian bread same in style and texture to pizza dough. Focaccia can be used as a side to many meals or as sandwich bread. Focaccia al rosmarino is a common focaccia style in Italian cuisine that may be served as an appetizer, table bread, or snack. 

I am making Garlic,coriander and potato Focaccia today because I love these flavors and I am going to serve this bread with soup later.

Ingredients

List 1,

  • Strong White Flour   1 lb
  • Salt  1 tsp
  • Yeast   7 g
  • Water   1/2 pint 
  • Olive oil  4-5 tbsp

List 2,

  • Extra virgin olive oil  as required
  • Boiled potato with skin  1-2
  • Garlic finely chopped  1 tbsp
  • Fresh coriander chopped  1 tbsp

In a mixer bowl add in strong white flour, yeast, salt.

Run the mixer for few seconds, then add in almost 1/2 pint warm water while the mixer is running. (Amount of water can change because of different brands flour)

Run the mixer on speed 2-3 for 10 minutes almost. You will get a very soft dough like shown in picture. Then add in 4-5 tbsp olive oil and again run the mixer until mix well.

Now cover the dough and let the prepared dough rise for 1 hour or until double in size.

You can see dough is nicely risen.

In a bowl add in finely chopped garlic, chopped coriander and olive oil 3 tbsp. Mix well.

Dust 2 deep rectangular tins with semolina.

Cut the dough in 2 parts. Knead it lightly for few seconds.

Take 1 dough ball. Pushing and pulling with your hands make it tin shaped and place in tin. Push the dough with your fingers like shown in picture.

Now sprinkle a generous amount of extra virgin olive oil on it.

Take some garlic, coriander and place it on the dough. Then push inside with your fingers. Take a boil potato, roughly break it with skin, with your fingers and push the small pieces of potato inside the dough. sprinkle some sea salt on top if you want.

Now cover the focaccia with cling film and let it rise again for half hour. Then sprinkle again with some extra virgin olive oil.

Bake in a preheated oven at 200 C for 8-10 minutes then tun the oven heat down at 180 C and cook further 10-15 minutes almost or until done.
