4. in a pan add 1/4 cup oil and 1 tbsp desi ghee…if you don’t have desi ghee don’t add but this will give biryani a very nice flavor and this a secret of making a good biryani.
8.when chicken is tender add 3 tbsp tamarind paste give it a final stir turn of the heat. this is the picture of final curry for biryani. you can see it has light gravy in it.
9. now in a wide pan add 3-4 jug of water. add all list 1 ingredients.let it boil. when water start boiling ,add soaked rice. boil them until 70% done.
11. now take a wide and large pan for dam, this is very important because rice want space for growing, if you take small pan just because you don’t want to wash the bigger pan all previous effort you done to make this biryani will ruin . So always try to use bigger pan for dum and you will see how beautifully your rice come out .. 🙂 So in this wide and large pan add 3-4 tbsp oil spread it in the bottom. then first layer half boiled rice. 2nd layer all chicken curry on rice.
12. now layer the remaining half rice on this chicken curry. and finish with chopped coriander and mint. and 2 fried onion, we fried in beginning, also add 1/2 tsp yellow food colour on rice .
13. now with tight lid and a something heavy on that lid, so that completely seal. turn on the heat ,first high heat for 1 minute, then on very low heat for 11-12 minutes cook it.
