This is Arabic style shawarma…This is same recipe of shawarma which you eat in Saudi Arab streets…It is made of Khubz ,flavorful marinated chicken, crunchy salad and yogurt dip.
Serving= makes about 7-8 shawarma rolls
Ingredients,
For chicken marination, list 1
Boneless Chicken 700-750 g
salt 1 tsp
lemon juice 1/4 cup
yogurt 4 tbsp
paprika powder 2 tsp
cumin powder 1-1/2 tsp
oil 4 tbsp
For Khubz (bread), list 2
plain flour or wheat flour 500 g (I am using plain flour)
active dry yeast 2 tsp
sugar 1 tsp
salt 1/2 tsp
For crunchy salad, list 3
red onion 2 big
tomato 1
iceburg lettuce 1 small
pickled cucumber 2-3
pickled jalapeno 3-4
parsely 1/2 cup chopped
salt 1 tsp
paprika powder 1 tsp
sumac powder 3 tsp heaped
For yogurt sauce, list 4
yogurt 250 g
salt 1/4 tsp
lemon juice 2-3 tbsp
paprika powder 1/2 tsp (add more if you like spicy)
1. Take chicken, marinate with all above list 1 ingredients for 1 hour or if you have time marinate it over night…. keep foil on a baking tray…place chicken on it.
2. mix it first in a bowl ,then put it on a clean surface and knead well with palm of your hands… apply oil in a bowl…put the dough in it…cover with cling film and keep in a warm place for almost 1 hour .
1. Take 2 big red onions, slice them fine and soak them with 1 tsp salt and ice cold water in the fridge for 1 hour….after 1 hour throw all water and wash them properly….this way bitter taste of onions will finish. 2. Cut all above remaining list 3 vegetables in slices…add in with salt, paprika and sumac powder.
