Gajrella

Different people make gajrella in different ways… I make it like this and every body just love it …

Serving = 9-10

Ingredients,
  • rice  1/2 cup
  • milk 1-1/4  kg   (1250 gm)
  • carrots  2 medium
  • sweetened condensed milk  400 gm  (1 can)
  • almonds  25
  • cardamom powder  1/2 tsp
  • Kewra water 2 tbsp
Directions,
1. Soak 1/2 cup rice for 2-3 hours, put them in a chopper with 1 cup water and 20 almonds. Chop them 2- 3 times, don't make fine paste, chop them to that stage where you can see small pieces of rice and almonds. set a side.

2. peel 2 carrots, grate them with a hand grater or in a food factory. set a side.

3. In a wide pan boil milk on medium heat ,continuously stir it so that will not stick to the pan. boil it for 10 minutes.

4. after 10 minutes ,milk will reduce a little, add condensed milk in it. and again stir for 2 minutes.now add chopped rice and almonds we made before. Cook and stir for 10-15 minutes.

5. now add red food colour as required, to get light pinkish colour...you can skip this step but i like my dishes colourful so am adding food color. Add grated carrots stir for 2 minutes ,turn off the heat.

6. Gajrella is ready, all above cooking procedure will take 25-30 minutes. and remember to stir it continuously on medium to high heat. All taste of this gajrella will be depends how perfectly you stir it, with out burning the bottom.

garnish with crushed almonds, keep in fridge for atleast 5-6 hours. serve
