Vanilla Panna cotta

Vanilla PannacottaPanna cotta (Italian meaning “cooked cream”) is an Italian Dessert of sweetened cream thickened with gelatin and molded. The cream may be flavored with coffee,vanilla or other flavorings.

For the preparation sugar is dissolved in warm cream. The cream may be flavored, by infusing spices or by adding coffee, vanilla, and other extracts. Gelatin is softened in a cold liquid, then added to the warm cream mixture. Then it is poured into molds and allowed to set.

Although the name means ‘cooked cream’, the ingredients are only warmed enough to dissolve the gelatin and sugar.

Panna cotta is often served with a coulis of berries, or a sauce of caramel or chocolate.It may be covered with other fresh fruits. I am serving mine with fresh strawberries.

  • 300 g Whipping Cream

  • 1/2 tsp Vanilla paste

  • 25 g Sugar

  • 1 Gelatin sheet

  • Strawberries and edible flowers for serving


  • In a heavy bottom saucepan add in whipping cream, vanilla paste, sugar. Turn on the heat, cook until sugar has dissolved and cream is hot. Do not boil. Turn off the heat.
  • Soak the gelatin sheet in cold water. Take out when its soft and squeeze all water from gelatin sheet.
  • Put this gelatin sheet in the cream and mix until dissolve.
  • Pour the mixture into desired molds. Leave it to cool then chill in the fridge for 4-5 hours or over night to set it nicely.
  • Put the mold in hot water to release the pannacotta from sides, take out the pannacotta on serving plate.
  • Serve and decorate with fresh strawberries, edible flowers and crystallized strawberries.
