Chicken Tikka Pizza with all basics (perfect dough and pizza sauce)

Ingredients,
List 1 For Pizza Dough
  • dried yeast  2 tsp
  • sugar 1/2 tsp
  • 1-1/2 cup luke warm water
  • plain flour  4 cups plus extra for dusting
  • salt 3/4 tsp
  • vegetable oil  1/4 cup plus extra for brushing
List 2 for Pizza Sauce
  • double concentrate Tomato puree  150 ml
  • onion 1 small
  • garlic  1 tbsp chopped
  • oil 2 tbsp
  • salt  1/2 tsp
  • Italian seasoning  1 tbsp
  • red chili flakes  1 tbsp
List 3 for chicken tikka pieces
  • bone less chicken 300 gm
  • chicken tikka masala  3-4 tbsp
  • garlic chopped 1 tsp
  • yogurt 1 tbsp
  • oil 2 tbsp
List 4 for filling
  • mozzarella cheese  200-300 gm
  • Italian seasoning  1 tsp
  • butter for brushing
  • onion 1 small finely slice
 Directions,
1. Take boneless chicken pieces, small cuts, marinate them with 4 tbsp tikka masala, 1 tbsp yogurt, 1 tsp garlic paste for 15-30 minutes.

For Pizza Sauce
3. for pizza sauce ,i am using this Sainsbury's tomato puree double concentrate.

1. for pizza sauce ,heat a pan add 2 tbsp oil with 1 small chopped onion and garlic. stir until changes its colour. 2. now add tomato puree with salt and Italian seasoning and 1 cup water.mix well. 3. add 1 tbsp red chili flakes or as required. 4. cook it for 5 minutes or until slightly thick. leave it to cool.

5. for pizza dough take 1-1/2 cup luke warm water add 2 tsp dried yeast and 1/2 tsp sugar. mix it and leave in some warm place for 15 minutes. (warm place means you can keep it in off  microwave)

8. take a butter knife and with out touching this dough with hands, give cutting motions with butter knife until combine. cutting motions with knife will add air in this dough which will make it just right.

10. now sprinkle some plain flour on a plain surface. and keep this dough on it. now start kneading dough.  i am so sorry i cant show you kneading method in pictures because my hands are in dough and cant touch camera this time..:) so with the help of your hand heel, push the dough forward with a smooth stroke. and with the help of other hand fold the dough back at its place. repeat kneading it for at least  6-7 minutes until its completely soft and gluten formed.

13. after 3 hours dough will be rise almost triple in size. so push it and make ball from it. and again brush it with oil .

15. now  the dough is ready to use. keep it with tight plastic wrap in fridge if you are not using it now.

16. cut the dough in 2 parts, this dough will make 2 large size pizzas. take 1 part on plain work surface with some dry flour so the dough will not stick there. with your fingers make edges and tray to make it round with rolling pin and dry flour.

17. grease a pizza pan. layer the dough on it. if the dough is knead properly, it will not tear easily.

18. first layer pizza sauce on it, then chicken pieces, then mozzarella cheese and at end finely slice onion. brush the edges with butter so they will be clourful and crispy after baking.

preheat the oven on 250 C for atleat 35-40 minutes. Keep the pizza in it and turn the heat on 220 C. Bake it for 14-5 minutes.
