Aloo Andy ka salan (Potato & Egg Curry)

Ingredients,
  • eggs hard boil  3
  • potatoes  2 medium
  • cumin hand crushed 1tbsp
  • red chili powder  1 tbsp
  • salt as required
  • tomatoes  1
  • onion  1
  • ginger garlic paste  1 tbsp
  • green chilies 2
  • fresh chopped coriander for garnish
Directions,
1. Cut potatoes in cubes, finely slice onions,cut skin less tomatoes in cubes, chop coriander.

2. In a  pan add 1/8 cup oil, fry hard boil eggs in it on medium heat.

3. Fry them until light brown in colour, take them out. set a side. It is very necessary to fry eggs in any egg curry because eggs surface is sticky and when you add them in curry with out frying them ,they cant absorb curry because of sticky surface.

6. add 1/4 cup water so the curry will not burn. stir on medium heat until tomatoes are completely tender.
