Beef Yakhni Biryani

Ingredients,

List 1

  • beef   700 gm
  • onion 2 medium
  • ginger paste  1 tbsp heaped

  • yogurt  200 gm
  • fresh green chilies   9-10
  • whole coriander seeds   1-1/2 tbsp

  • salt  2 tsp or as required
  • oil  1/2 cup
  • desi ghee  2-3 tbsp

List 2  Garam Masala

  • big cardamom   4
  • small cardamom  6-7
  • star anise  2
  • Bay leaf (tez pata)  3-4
  • cumin seeds  3/4  tbsp
  • cloves   1 tsp
  • whole black pepper  1 tsp
  • cinnamon stick  2-3

List 3  For Rice Boiling

  • rice  500 gm soaked for 1 hour
  • star anise  2
  • cumin seeds  1 tbsp
  • salt  4 tsp

List 4  For Dam (Layering rice)

  • yellow food colour  1/4 tsp
  • fresh coriander chopped  1 cup

Directions,

1. take a cheese cloth, keep 1-1/2 tbsp coriander seeds and 1 tbsp fennel seeds.

12. Take 3-4 jugs water in a pan, add 4 tsp salt, 2 star anise and 3/4 tbsp cumin seeds. let it boil.

12.when the meat is cooked for 1 hour 45 minutes, Take 3-4 jugs water in a separate pan, add 4 tsp salt, 2 star anise and 3/4 tbsp cumin seeds. let it boil.
13. when water starts to boil add 1 hour soaked rice in it. and let it boil for 30 seconds. now take out half rice with a wide spoon. be careful this first batch of rice should not boil for more than 30 seconds.

14. spread the half rice on meat gravy.  Meat gravy should be on low heat.

15. now boil the remaining rice for 3 minutes. and strain them.throw the excess water.
