Mutton Pulao with Zeera Raita( mutton rice with cumin yogurt dip)

Serving = 4 persons

Ingredients,

  • rice  2cups or 600gms
  • meat small pieces  650-700gm
  • salt  2 tsp
  • yogurt  250gm
  • whole garam masala mix  ( 1 bay leaf,  4 cloves , 1 big cardamom, black pepper corn  1/2 tsp, cinnamon  1 stick)
  • garam masala powder  1 tsp
  • red chili flakes  1 tsp
  • lemon juice 2 tbsp
  • whole cumin  1 tsp
  • caraway seeds  1 tsp
  • onion 1 medium
  • ginger paste  1 tsp
  • garlic paste  1 tbsp

Directions,

1. add 1/4 cup oil in a wide pan. turn on the heat. add 1 medium onion cook it until changes its colour.now add ginger garlic paste,whole garam mix masala, cumin seeds, caraway seeds cook it on medium for 1 minute.

4. now add 4 cups of water. let it cook for 1-1/2 hour or until meat is completely tender.

5. wash and soak the rice for half hour, when meat is completely tender ,if it has some water in it ,measure the water and with total 4 cups of water add rice and cook on high heat.

6. when all water evaporates add 2 tbsp lemon juice on top. and with lid on cook it on veryyyy slow heat for 10 minutes.

7. serve with zeera raita. for this take 1 cup yogurt, 1/4 tsp salt, 1/2 tsp roasted cumin seeds, 1/2 tsp chili flakes, and 1/4 tsp garlic paste. mix well. serve.
