Biryani is a rice-based food with spices and meat. You can use any meat in it, like beef , lamb, chicken, fish, prawns or you can make it vegetarian with different vegetables. I present my take on this classic with prawns this time and this recipe is easy & quick to make.
Prawn biryani is slightly different than other biryani recipes because prawn cook very quickly and if we over cook them than they taste like rubber so we have to be careful while making this.
My husband is a biryani lover so I always make this classic dish in different styles and flavors, and we like to eat biryani with lot of masalas (like it should not be dry, and it should be made with kind of extra gravy)…. that’t why I create this recipe and added enough onions, tomatoes etc to give it a masala type feeling, and that’s why I gave it name Prawn Masala Biryani.

Ingredients,
List 1,
- Prawns 225 g
- Onion 1
- Oil 1/4 cup
- Ginger paste 1/2 tbsp
- Garlic paste 1/2 tbsp
- Red chili powder 1 tbsp
- Coriander powder 1/2 tbsp
- Garam masala powder 1/2 tbsp
- Crushed cumin 1/2 tbsp
- Turmeric powder 1/2 tsp
- Tomatoes 3 small
- Salt 1 tsp
List 2, (whole spices)
- Star anise 1
- Small cardamom 3-4
- Big cardamom 2
- Cinnamon stick 1 small
List 3,(For boiling rice)
- Rice 250 g
- Caraway seeds (kala zeera) 1 tsp
- Salt 3 tsp
List 4, (For dum)
- Green chili 2
- Fresh mint leaves 12-14 (chopped)
- Lime small (sliced)
- Kewra water 1 tbsp
- Yellow food color 1/4 tsp
- Milk 1/4 cup
Directions,
Fry them in hot oil for 1-2 minutes.
Take out, set a side.
Then add all list 2 whole spices and stir few seconds.
After that add red chili powder, salt, coriander powder, garam masala powder, turmeric powder, crushed cumin, again stir few seconds.
Add ginger, garlic paste, stir few seconds.
Now add tomatoes.
Add in fried prawns, mix and turn off the heat. Set a side.
Now in another pan spread half rice then prawn curry we made above then again remaining rice.
Now with tight lid on,turn on the heat high for 5 minutes then on very low heat give it 10 minutes dum.
