Aloo Channa Biryani (Potato Chickpea Biryani)

This is a flavorful aromatic suitable for Vegetarians Biryani Recipe, I design this recipe specially for my vegetarian friends. It includes all flavors which a non veg biryani has it is made of Potatoes, Chickpeas, whole garam masalas, rice , yogurt, onions, tomatoes etc. Try it and i am sure my veg and non-veg friends , both will like it.

Ingredients,

List 1

  • Potatoes  4-5  medium
  • Chick peas boiled  400 gm or 1-1/2 cup
  • rice  400 gm
  • yogurt  1 cup
  • garlic chopped  1 tbsp
  • ginger chopped  1 tbsp
  • salt  4tsp or as required
  • green chilies 5-6
  • turmeric powder  1 tbsp
  • onion 2 medium
  • tomato  1
  • whole cumin seeds  1 tbsp
  • lemon juice  2tbsp
  • oil 1/4 cup
  • desi ghee 2tbsp
  • fresh coriander chopped  3 tbsp
  • fresh mint chopped  2 tbsp
  • kewra water  1 tbsp
  • 2 chicken cubes if you are non-veg

List 2 whole garam masala

  • big cardamom  3-4
  • bay leave  3-4
  • small cardamom  6-7
  • cloves  1 tsp
  • whole black pepper 1tsp
  • cinnamon stick  1-2
  • star anise 2

Directions,

1. In a wide pan add 1/4 cup oil with 2tbsp desi ghee, now add 2 onions finely sliced.

Now add cubed poatoes, turmeric powder, and whole cumin seeds, with 1/4 cup water , stir and cook until all water evaporates ,then again add 1/4 cup water and stir until all water evaporates. i am doing this because i want to cook all masalas, if i skip this step the taste of raw turmeric will be in biryani, and thats not good for the perfect biryani taste. so make sure to cook all theses spices like this.

5. Now add 1 tsp salt, yogurt and green chilies cut in long slices, with 1/4 cup water and stir for 1 minute on medium heat. also add 2 chicken cubes at this time if you are non-veg, if not skip this.

7. when potatoes are done, turn off the heat. add 2 tbsp lemon juice stir.you can see there is almost 3/4 glass water still in it. and thats exactly what we want. Taste salt at this point, if you feel add more.
8.  Now boil water in a pan when it starts to boil add 30-45 minutes soaked rice in it.

10. layer them on potatoes and chickepea gravy. now boil the remaining rice for 1 minute ,then drain them and layer them on top of 1st batch of rice.

now boil the remaining rice for 1 minute ,then drain them and layer them on top of 1st batch of rice. sprinkle fresh chopped coriander and mint, and sprinkle kewra water in top.Now turn on the heat on high with lid until when gravy starts to boil .
and with tight lid on turn the heat very low and cook it for 12 minutes. lid should be tight, that means seal it properly , i used flour to seal it.
