Biryani Style Masala Pulao (Vegetarian)

Ingredients,

  • basmati rice   500 gm
  • peas   2 cups
  • spinach leaves   70 gm or 1 bunch
  • tomato peeled   2
  • green chilies 3-4
  • garlic paste  1 tbsp
  • ginger paste  1/2 tbsp
  • oil  1/2 cup
  • white vinegar  2 tbsp
  • salt  as required

use any kind of biryani masala  1 packet if you don’t have all these masalas

Masalas

  • black salt  1 tsp
  • garam masla  1 tsp
  • chat masala  2 tsp
  • cinnamon powder   1/4 tsp
  • nut meg powder  1/2 tsp
  • red chili powder  1/2 tsp
  • coriander powder  1 tsp
  • small cardamom powder  1/2 tsp
  • cumin powder   2 tsp
  • cumin seeds  1 tbsp
  • cloves   5-6
  • big cardamom  1-2

Directions,

1. in a pan add 1/2 cup oil, add onions. cook them until they start to brown.

3. now add all above masalas, and salt as required. if u don't have all above masalas just add 1 packet biryani masala with salt as required.

4. add chopped spinach leaves. now on medium to  high heat add 1/4 cup of water stir it until all water evaporates, again add 1/4 cup water stir until all evaporates. Add total of 1-1/2 cup water and continuously stir it. This way you are making qorma of pulao. the better you stir it the better will be the taste. But don't burn the masala.

7. now add 600 ml water. let it boil. soak the rice for 1 hour ,now add in this boiling water.

7. cook on high heat until all water evaporates.  when all water evaporates add 2 tbsp white vinegar on top and with tight  lid on cook it on very low heat for 10 minutes. white vinegar will help rice not to stick with each other.
