  • Plain flour   6 oz
  • Wholemeal flour  6 oz
  • Baking powder  3 tsp
  • Unsalted butter   4-1/2 oz
  • Salt  a pinch
  • Grated Parmesan  1 oz
  • Grated mature cheddar  1 oz
  • Fresh Thyme leaves  1/2 tbsp 
  •  Eggs  2
  • Milk   as required

1. Break the eggs into a measuring jug and make up to 1/2 pint with milk.

In a bowl add flour,wholemeal flour, baking powder, salt and butter. Run the mixture on low speed until you get crumbly mixture.

Add in both grated cheese and mix it 3-4 seconds.

Add in egg and milk mixture until flour combines together. You will not need to add whole egg,milk mixture.

You will have a mixture like this a little bit sticky.

Take it out on a lightly floured surface and press with light hands to make a round ball.
Apply some dry flour on your hands if it feels sticky.

Now roll it almost 1-1/2 cm thick and cut with a small cutter.
You can do them big but I am making small bite size.
Do not twist the cutter while cutting, just press it and take out.

Place them on a baking tray lined with silicone mat. Brush with egg milk mixture.

You can also sprinkle wheat barn on it to give it a nice look.
Now bake them in a preheated oven at 190 C for 12-15 minutes.
