Fruit Scone Recipe

A scone is a baked good, usually made of flour with baking powder as a leavening agent . A scone is often lightly sweetened and occasionally glazed with egg wash. The scone is a basic component of the cream tea.

With a little homemade jam and clotted cream scones taste so yum. I just love them and this recipe is perfect. I learned this from my Chef Lecturer Scott. He told us that he always uses this recipe in making big batches of scones and it will never go wrong. So thanks to him for this amazing recipe. 

You can use glazed cherries/sultanas/raisins in it. I am making them with glazed cherries.

Ingredients

  • Self-Raising Flour  1 lb
  • Unsalted Butter  6 oz
  • Caster Sugar  3 oz
  • Glazed cherries  3 oz
  • Salt  a pinch
  • Eggs  2
  • Milk as required

1. Break the eggs into a measuring jug and make up to 1/2 pint with milk.

Mix together. Set a side

Measure cherries and break them in 2-3 pieces. Set a side.

In a bowl add self-raising flour, butter, sugar and salt.

Run it on low speed until crumbly texture. Or you can also do it with hands.

Now add in glazed cherries and quickly mix for 4-5 seconds.

Add in egg and milk mixture while the mixer running very slowly until it combines together. Do not over mix it. You can also do it by hands. You may not need the whole egg milk mixture in it. Put a little at a time.
There should be some egg milk mixture left. Keep it a side we will use it later for brushing.

You can see it is not like any other dough. It’s just mix together.

Now take it out on lightly floured surface. Press lightly ,do not kneed it.

Roll it quite thick, almost about 3-4 cm thick then cut with a round cutter. Press the cutter on it, do not twist the cutter. Just push it into and take out.

Place on a baking tray. Brush with remaining egg milk mixture on top.
Do not drop the egg milk mixture on sides of the scones. It will not let them rise. Now bake  them in a preheated oven at 190 C for 15-16 minutes.

Baked scones. Let them cool completely on the same tray.
