Deg Style Qorma/Korma

Deg means big cooking pot. Traditionally in Pakistan it is used to cook for big events for lots of people and whatever they cook in it, that dish has a very different flavour and aroma. Most of the time they cook this on wood fire and that gives the dish an awesome flavour.

As a working women when you don’t have time for cooking everyday for your family, I prefer cooking big batches of curries and other things once or twice a week. So when I am not at home, there should be something in fridge for my kids.

I experiment with different methods of making curries always and specially now I prefer more easy ways because of my busy routine. This recipe is one of those easiest ones which I make when I need something really fancy, tasty but quick. My family loved it and after tasting it I remember those Pakistani wedding degi qorma flavour. Yes this recipe is that good and amazing. That is why I named this recipe Deg Style Qorma.

Ingredients

  • Lamb meat with bones  1500 g
  • Oil  1/2 cup
  • Onions  750 g
  • Ginger garlic paste  2 tbsp
  • Salt  1 tbsp
  • Kashmiri Red chili powder  1-1/2 tbsp
  • Coriander powder  2 tbsp
  • Turmeric powder  1/2 tbsp
  • Garam masala powder  1 tbsp
  • Fennel powder   1/2 Tbsp
  • Whole small cardamom  6-7
  • Yogurt  500 g
  • Almond powder  3 tbsp
  • Lemon juice  2-3 tbsp

Heat a pan, add in oil and finely sliced onions. Stir and cook until brown.

When you see brown onions, add in ginger garlic.

Stir for few seconds.

Now add meat and all above spices and salt.

Stir and cook for at least 10 minutes. Do not burn the spices. If you feel spices are sticking to the bottom of the pan then put some water and stir/cook again.

Now add in 2 cups of water.

Add in yogurt and almond powder. Mix well.
I added water first because I want to lower the temperature of the curry so when I put yogurt in it, yogurt will not curdle.

Mix well. Let it boil.

Now on low heat, with the lid on cook it until meat is nicely tender. I cooked it for almost 1 hour 15 minutes.

When meat is cooked properly, add in 2-3 tbsp lemon juice, taste salt and turn off the heat.
Qorma is ready, serve it with naan/chapati or white steamed rice.
