Lamb Leg Roast

Serving= 5-6 persons

Ingredients,

List 1

  • Lamb leg   1.5 KG
  • Lemon juice  8-9 tbsp
  • garlic finely chopped  2 tbsp
  • honey 2 tbsp
  • cinnamon sticks  3
  • thyme  10-15 stems
  • potato  4
  • oil 1/8 cup

List 2,

  • turmeric powder  1/2 tbsp
  • cinnamon powder  1/2 tbsp
  • clove powder  1/4 tbsp
  • paprika powder  2 tbsp
  • chili powder  1 tbsp
  • salt  1-1/2 tsp

Directions,

1. Take a lamb or goat leg or arm....with some fat on it. insert deeply knife in it  all over so the spices will go inside easily.

2. Now rub 2 tbsp garlic and 5 tbsp lemon juice on it nicely.

3. Mix all list 2 spices in a bowl. rub them nicely on meat ,both sides.

4. Take a thin knife ,insert it deep in meat and twist it....do it in three times on meat.

5. Take cinnamon sticks with thyme stems, insert them in the meat like shown in picture.

6. Take a roasting pan,keep foil on it, then butter paper then marinated lamb leg, drizzle 2 tbsp honey on top and 4 tbsp oil on top.

7. Cover and seal nicely this with foil, use double layer of foil if your your foil is thin. this should be seal properly so no steam will go out while cooking.

this should be seal properly so no steam will go out while cooking. Preheat the oven on 150 C…. Bake this leg for 5 hours in it.
8. After 5 hours open it, sprinkle 3-4 tbsp lemon juice on top and some salt if you feel its less. Take out the cinnamon sticks throw them.

9. Transfer roast to serving oven proof pan,Bake it again on 250 C , for 10 minutes. You can keep the juices and oil with leg if you want ,if you don't like it ,discard it.

you can see inside is so tender and soft, just melts in your mouth.

you can also serve this roast with baked potatoes, for this take potatoes cut them in thick slices, boil them with salt and turmeric until 70% done. Throw the water, dry them and layer on a baking tray. drizzle some oil on top and bake them on 200 C ,for 20 minutes or until you see crispy top.
