Beef Degi Biryani

Serving = 4 persons
Ingredients,
List 1,
  • beef with bones  550-600 gm
  • garlic cloves 6-7
  • ginger 2 inch piece
  • green chilies 2
  • onion 2 medium
  • yogurt  1 cup
  • almonds  16-17
  • whole black cumin 1/4 tbsp
  • whole cumin 1/2 tbsp
  • whole coriander  1 tbsp
  • oil 1/4 cup
  • desi ghee  2 tbsp
  • salt 1-1/2 tsp or as required
  • crushed red pepper  1 tbsp
  • turmeric powder 1/2 tsp
  • nutmeg powder 1/2 tsp
List 2 for Whole spices bag
  • big cardamom  4
  • small cardamom 8-10
  • cinnamon stick 1
  • bay leave  2
  • star anise 2
  •  cloves 1 tsp
  • whole black pepper 1 tsp
List 3 for rice boiling
  • rice  350 gm
  • black cumin seeds  1/4 tbsp
  • cumin seeds 1/2 tbsp
  • star anise 1
  • salt 3 tsp
List 4 for layering rice (Dum)
  • Yellow food colour 1/4 tsp
  • milk 1/8 cup
  • Kewra water  1 tbsp
  • fresh chopped mint 2 tbsp
  • fresh chopped coriander  2 tbsp

Directions,

1. In a blender ,blend garlic cloves, ginger piece and 2 green chilies with 1/2 cup of water. set aside.

2. Grind 16 peeled almonds, whole coriander 1 tbsp ,whole black cumin 1/4 tbsp , whole white cumin 1/2 tbsp very fine. set a side.
3. Take all whole spices from list 2. 4. Keep them in a cheese cloth and make a bag.Bag should be loose so the spices have space to release their aroma and taste. you can also add these spices with out bag.  5. finely slice 2 onions fry them until crispy. 6. take out on paper towel , set a side.

5. finely slice 2 onions fry them until crispy.
6. take out on paper towel , set a side.
7. In a wide pan add oil and desi ghee with beef and ginger garlic ,green,chilies paste we made above. 8. Turn on the heat stir and cook until all juices evaporates. 9. now add bag of spices we made before with turmeric powder, red chili powder

9. now add bag of spices with fried onions we made.(save some fried onion for end dum)
10. Add 1/2 tsp turmeric powder, 1 tbsp crushed chilies, 1/2 tsp nutmeg powder, and salt 1-1/2 tsp. Stir on medium heat for 1 minute .
11. Now add yogurt,stir it. 12. Add grind almond mixture we made above. 13. Stir and cook for 1 minute. 14. now add 2 glass water and let it cook with lid until meat is fully tender.

15. In a separate pan take water, add in all list 3 ingredients apart from rice. let it boil. when its boiling add in half hour soaked rice and cook them until 2 kani, (2 kani is when you break the rice it will break in 3 pieces). now strain the rice. Throw all water.

layer rice on gravy, then mix milk and yellow colour, sprinkle on it, also sprinkle kewra water, coriander, mint and fried onion on top.

17. Now cover it with tight lid and turn the heat on high for 2-3 minutes until gravy inside starts bubbling. now turn the heat to low and let it cook for 10 minutes.
