Qofta Masala

The secret of making softest ,yummiest qoftas…I tried many recipes but this one is best.

Ingredients,

For making Qofta

  • lamb mince with fat   300 gm
  • roasted gram  1 cup (bhunnay channy)
  • poppy seeds powder  1tbsp  (Khaskhas)
  • onion 2 medium
  • green chili 2
  • coriander  a hand full
  • salt  1 tsp
  • red chili powder 1 tsp
  • garam masla powder  3/4 tsp
  • small cardamom powder  1/4 tsp
  • cumin powder  1/2 tsp

For gravy

  • onion  1 medium
  • oil 1/4 cup
  • almonds  7-8
  • poppy seeds  1/2 tsp  (khaskash)
  • caraway seeds  1/2 tsp  (kala zeera)
  • yogurt  3-4 tbsp
  • lemon juice  1 tbsp
  • salt 1/4 tsp or as requird
  • red chili powder  1/4 tsp
  • garam masla powder  1/2 tsp
  • turmeric powder 1/4 tsp
  • coriander and green chili for garnish

Directions,

1. Take a food processor, put 1 cup roasted grams (bhunnay channy) in it...make fine powder...take out set a side.

2. Now add onion, chop them.

3. Put fresh coriander, green chili...chop them .

5. with lightly wet hand make 12-15 qofta. because of wet hand mince will not stick on your hand.

6. Take a pan ,add 1/4 cup oil... cook qofta in it until brown on medium to high heat...don't over cook them we just want to brown them.

7. In the remaining oil in which we fried qoftas, put finely sliced 1 onion...cook it on slow heat until light brown.

8. Now mix yogurt with 1/2 cup water, add in and stir continuously...yogurt will curdle if you do not stir it.

9. Add turmeric powder, red chili powder, salt... stir and cook on low heat for 2-3 minutes...then add fried qoftas in it.

10, Add 1/4 cup water and with lid cook them on slow heat for 10 minutes.

11. sprinkle lemon juice...stir...then sprinkle garam masala powder,fresh coriander and green chilies... serve with fresh hot chapati or naan.
