Rogan josh Recipe

Rogan josh, also written roghan josh or roghan ghosht, is an aromatic lamb or goat meat dish of  Kashmiri. It is one of the signature recipes of Kashmiri cuisine. 

This recipe is kind of british Indian recipe, not an authentic recipe but I promise you it tastes divine if you follow the recipe accurately. 

It tastes best with naan/roti or white rice. So serve it how you like it.Also try my other curry recipes.

Ingredients

  • Lamb with bones  1 kg
  • Oil  1/4 cup
  • Sliced onion  2 cups
  • Whole Cumin  1 tsp
  • Garlic paste  1 tsp
  • Ginger paste  1-1/2 tsp
  • Kashmiri red chili powder  1/2 tbsp
  • Turmeric powder  1/4 tsp
  • Coriander powder  1 tbsp
  • Yogurt  150 g
  • Tomato puree  2 tbsp
  • Fennel powder  1 tsp heaped
  • Garam masala powder  1 tsp heaped
  • Saffron  a pinch

  • Cinamon stick  1
  • Star anise  1
  • Green cardamom  5
  • Big cardamom  1
  • Cloves  6

Keep all list 2 ingredients on a muslin cloth.

Make a loose bag tightly secure with a knot.

Heat a pan add 1/4 cup oil and this bag. Stir few seconds.

Add in finely sliced onions 2 cups.

Add in 1 tsp cumin.

Cook on medium heat until golden brown. Then add ginger, garlic paste, kashmiri red chili powder, coriander powder, turmeric powder. Stir few seconds.

Add in meat.

Stir and cook until all extra juices evaporate almost for 5-10 minutes.

Add in yogurt and saffron. Stir well.

Add in tomato puree, stir well.

Add in 1/2 cup water and salt.

With the lid on low heat cook it for 1 hour.

After the meat nicely cooked through add in fennel powder and garam masala powder. Mix well.

Cook it for 5 minutes on low heat with lid on and it is done 🙂

Sprinkle with fresh coriander. Serve hot.
