Omelette everyone’s favorite breakfast. Different people made it in different styles and I made it today exactly how I like it, for my husband today. Fine chopped onions and green chilies are my most favorite in it. Also I added some leftover chicken in it.
Leftover grilled chicken tastes amazing in omelette because it already has some flavors but if you don’t have this just saute small boneless chicken pieces with salt, pepper or with your favorite spices.
Also I served pan roasted tomatoes and tiger roll toasted a little in pan with butter. So check this easy, yummy breakfast recipe.

Ingredients
Eggs 3
Double Cream 2 tbsp
Salt 1/4 tsp or as required
Ground all spice 1/2 tsp
Onion 1
Green chili 1
Oregano 1/4 tsp
Leftover chicken 1/2 cup
Fresh coriander 2 tbsp
Tomato 1
Chat Masala as required
Tiger roll or bread
Butter as required
Oil as required

1. Finely chop onion, green chili and fresh coriander. Cut leftover chicken in small pieces.

2. Beat 3 eggs with 2 tbsp double cream.

3. Heat a pan add 2 tbsp oil and roast tomatoes on it for 1-2 minutes. Take out on serving plate.

4. Now same pan, add leftover chicken, saute a little then take out this chicken in a plate.

5. Same pan again add onions, green chili, salt, ground all spice and saute for 1 minute.

6. Pour beaten eggs on these onions and turn the heat low. Add some butter or oil on sides of omelette. Let it cook until you see egg are cooked from top a little. Do not turn the heat high in cooking this.

7. Now spread chicken pieces on it, sprinkle coriander and oregano. Let it cook on same low heat until fully done.

8. Fold this omelette. Take out on serving plate.

9. Same pan, toast tiger roll or bread slices with butter.

11, Sprinkle chat masala and salt on tomatoes. Serve hot.
