Coffee and Praline Gateau

 Coffee Praline Gateau. A perfect combination of coffee and praline in a cake. I made it for a friends get together and every one liked it. Also my family likes this cake a lot so a must try yummy cake recipe.

For sponge list 1,

  • Unsalted butter   50 g
  • Plain flour  (sifted) 125 g
  • Eggs   4 large (Room tempratured)
  • Caster sugar    125 g
  • Coffee granules   1 tbsp

For Praline  list 2,

  • Whole blanched hazelnuts    50 g
  • Caster sugar   150 g

For the filling list 3,

  • Mascarpone cheese    250 g
  • Double cream  250 g
  • Icing sugar    6 tbsp
  • Coffee granules    1-1/2 tbsp


For making sponge

Preheat the oven to 190 C (170 C fan). Grease two 8 inch round tins. Line with parchment paper.

1. Mix the coffee granules from list 1 in 2 tsp boiling water.
2. Take butter.
3. Melt it in microwave.
4. Mix coffee and butter together. Set aside

Put the egg whites into a clean ,grease-free bowl and whisk until soft peaks form.

Whisk in 1 egg yolk, repeat with the other 3 yolks.

The mixture should be thick enough to leave a trail when the whisk is lifted.

Using a spatula fold half flour into the mixture.

Pour around the coffee mixture we made above into the edge of egg mixture. Then add the remaining flour and fold gradually.

Cake mixture is ready.

Divide the mixture between the prepared tins and bake for almost 25 minutes or until risen and firm to touch.

Turn out on to a wire rack and leave it to cool completely.

For making filling

1. To make filling take coffee granules from list 3 and mix in 1 tbsp hot water. mix well.
2. Beat together mascarpone cheese and sifted icing sugar for 1-2 minutes.
3. Add in double cream and continue beating until stiff peaks form.
4. Add in cool coffee mixture , mix well . Done.

For making Praline

1. Add sugar from list 2 in a heavy bottom pan.
2. On medium heat cook it until it dissolves completely. Shaking the pan once or twice help it to dissolve evenly. Cook until dark golden brown caramel forms.
3. Line a non stick baking parchment on a tray and scatter hazel nuts on it. Do it in beginning.
4. Pour the caramel on nuts, leave it to cool.

Break the praline into 2 or 3 pieces and put into a plastic bag. Using a rolling pin,smash it into smaller pieces.

Cake Layering

Take 1 cake, keep it on a cake board. Layer some filling on it. Keep 2nd cake on it. Cover the cake completely with filling.

Pipe some flowers on edges and keep praline in middle.
