Dry Fried Sichuan Beef is a recipe from Chinese Sichuan cuisine. Sichuan Beef is a spicy dish which I love the most from Chinese cuisine. Sichuan peppers are like black peppercorn but red in colour and different in flavour. It will give your dish all the difference and it will taste like Chinese restaurant food. So try to find sichuan peppers but if you couldn’t find them then use black crushed pepper. Taste would be still perfect.

Dry dried Sichuan Beef has no sauce in it but it is filled with different textures and taste that you will love. Serve it with egg fried rice (recipe here) or steamed rice.

Ingredients

  • Beef (sirloin)   550-600 g
  • 1 cup vegetable oil
  • Large red chilies  2
  • Ginger  2 inch piece
  • Garlic cloves  3
  • Hoisin sauce  4 tbsp
  • Worcester sauce  2 tbsp
  • Sichuan pepper  2 tsp (use black pepper if you don’t have this) 
  • Onion  1 medium
  • Green onion   3
  • Salt as required

I am using this red chili. This is not too spicy.

Cut onion in slices, chop red chili ,garlic,ginger and green onion.

Cut beef in very fine small slices.

Heat 1 cup oil in a wok. Fry beef in 2-3 batches for 3-4 minutes. Take out, set a side.

Now same wok, take out all oil and add in 2 tbsp oil and onion slices, ginger, garlic, red chili. Stir on high heat for a minute.

Stir for 1 minute.

Now add in beef, hoisin sauce, Worcester sauce, sichuan pepper crushed, salt and mix well.

Add in green onion, stir on high heat, taste salt and turn off the heat.
