Nankhatai

Nankhatai is kind of shortbread. Its most favorite biscuit of Pakistan ,with less ingredients making this biscuit is really easy and simple. Just combine all ingredients and bake them.

Serving = makes about 3 dozen medium size nankhatai

Ingredients,

  • Flour   2-1/2  cup
  • Icing Sugar    1 cup
  • Baking powder   1/2 tsp
  • Melted chilled ghee  (clarified butter)   1 cup
  • Egg 1  for brushing   (optional)
  • Pistachios   as required

1. Take ghee/clarified butter in a bowl.

2. Melt it, then chill it in fridge.
Now measure it 1 cup

3. Sieve flour,icing sugar and baking powder.

4. Now add little ghee at a time and mix with fingers. Mix ghee in it until you get a dough leave remaining ghee.Do not knead it just mix with light hands. (you can see there is some ghee left in cup).

5. You will get something like this.

6. Make small balls ,press them, keep them on a grease proof paper, leaving some space in between.

7. Beat an egg, brush nankhatai with egg and keep some chopped pistachios on top.
Bake in a preheated oven on 180 C…. for 10-12 minutes.

8. Take out and let them cool for 10 minutes.
then transfer them on a cooling rack.
