Rasmalai

Rasmalai is Pakistani/Indian traditional sweet dish and every one love it. Small milk dumplings in slightly thick milk just melts in your mouth,addition of almonds and pistachio in it will make it more flavorful. Making it is a little bit tricky but once you get it right you will know its the easiest sweet dish ever. Always use full fat milk in making these. This is the biggest thing to follow especially in making rasmalai otherwise you will not control it.

Make it nicely chill it then have it. This way rasmalai will give perfect flavor.

Serving = 5-6

Ingredients,

  • Milk   1-1/2 kg
  • Sugar   1-1/2 cup (add less if you do not like more sweet)
  • Cardamom    5-6
  • Full Fat Milk    1 cup  (use nido milk powder)
  • Semolina   1 tbsp
  • Baking powder  1 tsp
  • Ghee  1 tbsp (with out melting)
  • Egg  1  (on room temperature )
  • Almonds and Pistachios  as required

1. Take 1-1/2 kg milk in a big pan. Add 1-1/2 cup sugar and cardamom. Let it cook for 10 minutes. Now turn the heat slow.

2. Now add 1 cup milk powder, 1 tbsp semolina, 1 tsp baking powder in a bowl.

3. Now add 1 egg and 1 tbsp ghee in it.

4. Quickly mix it and make it in to a dough.

5. Make small balls and press them in disk shape, or you can also make oval shape.
Put these balls straight into milk. Do not keep the dough or balls after making it, you have to do next step straight away.

6. Cook them in milk on medium heat for 4-5 minutes. Do not use spoon while cooking them, just shake the pan a little.

7. Now cook them with lid on medium to low heat for 8-10 minutes.

8. Remove the lid and turn off the heat.
Let them cool properly.
And do not touch them before they will nicely cool, otherwise they can break.

9. Garnish with almonds and pistachios and silver paper.
let them chill in fridge nicely.
