Sawiyon ka muzafir

Sawiyon ka muzafir also called Sawiyon ka Zarda is a traditional vermicelli dish… its the first dish we made on Eid .My mom always make this on eid in breakfast . First saute vermicelli in clarified ghee then cooked in sugar syrup or milk. Garnish with some almonds pistachios.

Ingredients,

  • Vermicelli    80 g (almost 2 cups)
  • sugar   1/2 cup  (use 3/4 cup sugar if you like more sweetness)
  • milk  1-1/2 cups
  • kewra water  1 tsp
  • orange food colour  1/8 tsp
  • small cardamom    3
  • cloves  3
  • lemon juice  1 tsp
  • clarified butter (ghee)   1/4 cup melted 
  • almonds and pistachios as required
  • crushed coconut  1 tbsp
  • silver paper

1. In a pan add milk, and sugar with orange food colour.

2. Cook until just sugar dissolves in it, until 1 boil.
Turn off the heat.

3. Take another pan ,add clarified ghee with cardamom and cloves.
cook until began to crackle.

4. Add vermicelli.

5. Saute it until light brown, leave it to cool for 2 minutes, turn off the heat.

6. Add milk and sprinkle lemon juice on it.
stir for 15 seconds, now turn on the heat.

7. Cook it for 2-3 minutes. Sprinkle 1 tsp kewra water on top.

8. Now give it 5-7 minutes dum on slow heat.

9. Sawiyon ka muzafir is ready.

10. Garnish with some crushed coconut, chopped almonds and pistachios and silver paper.
