Strawberry Pavlova

I made this Pavlova for my husbands birthday, its his favorite dessert thats why i made this instead of making cake , every one liked it so much, a very different and easy dessert, and also i will tell you how to make meringue perfectly, you should try and make it once.One thing that i didn’t know about it, my brother just told me its the national dessert of Australia.

Serving = 5-6 persons

Ingredients,

List 1 for meringue

  • 3 eggs whites  at room temprature
  • corn flour or corn starch   2 tsp
  • sugar  3/4 cup
  • vanilla extract  1  tsp
  • white vinegar  3/4  tsp
List 2 for topping and filling
  • heavy cream  300 ml
  • vanilla extract  1 tsp
  • icing sugar  3 tbsp
  • fresh strawberries  300 gm

Directions,

1. Take a 7 inch round tin and draw a circle on butter paper.

3. Now in a clean and dry bowl add 3 egg whites at room temperature, and start  beating with hand mixer. bowl should be clean and dry, and try to use a glass bowl because some times plastic bowl are not clean properly and greasy, and whites will not beat properly in them.

5. now start adding sugar and corn flour mixture in it, 2 tbsp at a time, and beat until mix completely.

7. beat it until you get peaks that are not too firm and not to soft, you don't have to over  beat it.

8. now layer this on butter paper where you draw the circle and shape it round with a rubber spatula. and fill some of it in a pipping bag and make small flowers on the edges. This is not necessary but i like doing this.

9. now bake it in a preheated oven for 1 hour.

10. After 1 hour turn off the oven and open the oven door. let the meringue inside the oven for 1 hour with out touching it.

11. beat heavy cream with 3 tbsp icing sugar and  1 tsp vanilla essence.

12. Now take out the pavlova from oven, it will be crispy from out side and chewy from inside.

top the pavlova with whipped cream and fresh strawberries. Brush some strawberry jam on strawberries for shine and good taste.  Keep it in fridge until serve.
