Ruz Bukhari /Dajaj Tandori /Daqqus. Its Arabic dish Ruz bukhari is rice with less spices its like pakistani simple pulao, Dajaj Tandori is chicken pieces marinate in salt pepper and lemon juice, then cook them in grill or oven, Daqqus is tomato chutni ,it has to types 1 is cooked and 1 is raw, I am making cooked daqqus here. I am also makin an Arabic salad here because for me no meal is complete with out a salad and we Pakistani people like chatpata khana so this salad give this dish a kick 🙂

Ingredients,
For Ruz Bukhari (rice) Â List 1
- Basmati rice  2-1/2  cup
- onion  1 medium
- tomato puree  3-4 tbsp
- salt  1-1/2  tsp
- small cardamom (choti ilaichi) Â 4-5
- cinammon stick  (darchini)  1 small
- cloves (long) 6-7
- whole black pepper  8-10
- 1 chicken cube  (or cook it in chicken stock)
- oil  4 tbsp
- white vinegar  1 tbsp
- raisins  (kishmish)  3 tbsp
For Dajaj Tandori (chicken) Â List 2
- Chicken  1 whole  almost  1 kg (try to take small chicken)
- salt  1 tsp
- black pepper crushed  1-1/2 tsp
- ginger garlic paste  1 tbsp
- lemon juice  1/4 cup
- oil  5-6 tbsp
- turmeric  1 tsp
For Daqqus (tomato chatni) Â List 3
- tomato  2 big
- tomato puree  1 tbsp
- salt  as required
- black pepper 1/4 tsp
- olive oil  1 tbsp
- cumin powder  a pinch
- garlic cloves finely chopped  3-4
- paprika powder  1/2 tsp
- lemon juice  2 tbsp
- tahini paste  1 tsp  (optional)
- green chili 1-2
Directions,
For Dajaj Tandori
keep a grill on baking tray like i do in picture, then place your chicken on it. Now cook it in hot oven for about 30 minutes. at end turn on the grill of oven and cook them until they get lightly colour from top.
brush them with oil before grilling them.
For Ruz Bukhari
2. Take 3-4 tbsp oil in a big pan. add chopped onion and stir until it changes its colour.
3. Add small cardamom,cloves, cinnamon stick, whole black pepper from list 1, stir for few seconds.
3. Now add tomato puree because we need some colour in these rice and stir for few seconds.
5. when water starts to boil add soaked rice and cook on high heat until all juices evaporates.
6. then sprinkle 1 tbsp white vinegar on it and keep raisins (khismish) on top and cook it on slow heat with tight lid ,for 10 minutes (this is called dum)
For Daqqus
2. Now take all above list 3 ingredients in a pan with 1/4 cup water.
3. cook them for almost 10 minutes.
4. add green chilies and cook for 2 more minutes.
