Singapore Noodles

Singapore noodles is a dish of stir-fried rice vermicelli , vegetables, scrambled eggs and meat, most commonly chicken, beef, or prawns. Very flavorful and tasty recipe.

  • Rice noodles  200 g
  • Shiitake mushroom   100 g
  • Green capsicum  1/2
  • Red capsicum  1/2
  • Green chili 1
  • Garlic chopped   1 tbsp
  • Ginger grated  1/2 tbsp
  • Bean sprouts    1-1/2 cup
  • Green onions  3
  • Chicken boneless   250 g (1 cup almost)
  • Egg  1
  • Turmeric powder  1/2 tsp
  • Oil  6-7 tbsp

List 2,

  • Oyster sauce  3 tbsp
  • Light soy sauce  3 tbsp
  • Rice vinegar  3 tbsp
  • Toasted sesame oil  1 tsp
  • Red chili crushed  1 tsp
  • Black pepper crushed  1/2 tsp
  • Salt  3/4  tsp or as required

1. Prepare rice noodles according to packet instruction. Wash them with cold water set a side.

2. Slice mushrooms,
fine Julian cut capsicum, small pieces of green onions and finely chop green chili, garlic. Crush garlic and set a side.

3. In a wok add 3 tbsp oil with chicken cut in small pieces and stir on high heat.

4. Cook it for 2-3 minutes, take out from wok and set a side.

5. Now same wok add 3 tbsp oil with green chili, garlic, ginger and stir 5-10 seconds.

6. Add mushrooms with turmeric powder and stir for few seconds.

7. Add all remaining veges and cooked chicken.

8. Stir for few seconds.

9. Add noodles and all list 2 ingredients.

10. Mix well and make a well in middle, add 1 beaten egg.

11. Mix and coat it on noodles, stir for 1 minute turn off the heat its ready.
