An elegant style of Pulao. Mutton zafrani pulao.Cooked with meat, all spices and saffron, that is why it is called zafrani pulao. It has very different taste than a normal pulao. You have a dinner/party at your home and you want to cook a rice dish which is easy and mind blowing. Trust me and choose this one. It’s very easy to cook and nothing less than a biryani.

Ingredients
List 1,
Mutton with bones 1 kg
Onion 2
Oil 1/4 cup
Rice 550 g
Salt 2-3 tsp or as required
Green chili 2-3
Fresh coriander hand full
Yogurt 250 g
Saffron a pinch
Milk 1/4 cup
List 2,
Turmeric powder 1/2 tbsp
Garlic paste 2 tsp
Small cardamom 3
Big cardamom 4
Bay leaf 1
Cinnamon stick 1 small
Star anise 2
Cloves 5-6

1. Heat a pan add oil and finely sliced onion.

2. Fry onions until light brown, then add all list 2 ingredients. Stir few seconds, do not burn it.

3. Add green chilies.

5. Stir it on high heat until all extra juices from meat evaporates and you see oil with sides of pan.

6. Add yogurt.Mix well.

7. Add 1 cup of water and let it cook for 1 hour or until meat is nicely tender.

8. When meat is nicely tender, add 2 cups of water in it, let the water boil then add rice(soak rice for half hour before adding) and cook them on high heat until all water evaporates.

9. Heat 1/4 cup milk ,add in saffron ,stir and pour on rice.

Pour saffron mil on it, cover it with tight lid and cook on low flame for 10 minutes.
