Zarda Recipe – Meethay Chawal

Zarda or Meethay Chawal is a traditional sweet dish of Pakistan invented by the Mughals. It is traditionally made on Weddings, Eid and special occasions. This dish is also sometimes referred as Punjabi Zarda as it is very popular in the province on Punjab in both Pakistan and India

Today I am making basic recipe of zarda, to clear you the concept of how to make it perfectly. In addition to my recipe You can add sweets like Gulab jamun, Chamcham , khoya, raison and nuts to make is more delectable.

Ingredients

  • 250 Grams Rice

  • 250 Grams Sugar

  • 200 Grams Clarified Butter

  • 2 – 3 Pcs Small Cardamom

  • 2 – 3 Pcs Cloves

  • 1 Pc Cinnamon Stick – Small

  • 1 Tbsp Kewra water

  • 1 Tbsp Rose water

Directions

  • Soak rice for half hour.
  • Fill a pan with water, put cinnamon stick, small cardamom, and cloves.
    Also add yellow food colour as required. Let it boil.
  • Add rice and boil them until full done. Strain them and throw all water.
  • Now in a separate pan add clarified butter with sugar and 1/4 cup water. Cook just until sugar dissolve in it.
  •  Add in rice.
  • Stir and cook for 2-3 minutes on high heat. Add kewra water and rose water. Then keep tight lid on and cook on low flame for 10 minutes (dum) .
  • Zarda is ready
