Spicy Rainbow Salad Recipe

Spicy Rainbow Salad is kind of a salad which we eat when we want to eat some thing spicy and sour in other words (chatpati chaat)  🙂 so for me and my husband it is not a salad, it is masaledar chaana chat 🙄 😆 . Yes this is our most favorite salad with all kind of nutrition. It has lettuce, chickpeas, onions, tomatoes, raw mango, chicken etc. You can add or takeout any vegetables with seasonal vegetables of your choice. 

Me and my husband are totally not salad persons but I make this salad as my comfort food because we love it and it is so quick and easy to make. We do not eat it as salad. We eat it as chatpati chaat. And those days when I make it I give my kids air fried chips and nuggets for their lunch  🙂 . Easy peasy life with out tension   😛  🙂 

I was thinking of what name I should give to this salad. Then I look at the colors and named it rainbow salad.It has red chili in it because I like it but you can add in black pepper or no pepper if you do not like it spicy.

This salad is a complete meal. You do not need anything else with it because it has all vitamins and protein in it. 

Ingredients

List 1,

  • Chicken boneless  200 g 
  • Red chili powder  1/2 tsp
  • Garam masala powder  1/2 tsp
  • Turmeric powder  1/4 tsp
  • Lemon juice  2 tbsp
  • Garlic cloves 2
  • Salt as required
  • Oil  1 tbsp

List 2,

  • Boiled chickpeas   1/2 cup
  • Red onion  1
  • Tomato 1
  • Raw mango  1
  • Mixed salad (lettuce, carrots) 1 packet
  • Fresh mint  15-20 leaves
  • Salt as required
  • Red chili powder  1/2 tsp
  • Lemon juice   5-6 tbsp

1. In a pan add 1 tbsp oil with 2 chopped garlic cloves. Stir few seconds.

Add in very small pieces
of boneless chicken , stir few seconds.

Add in salt, red chili powder, garam masala powder, turmeric powder, lemon juice from list 1.

Stir and cook until cooked through and dry. It will take almost 5-7 minutes. Let it cool a bit.

Cut onions in thin rounds, cube tomatoes and raw mango, finely chop mint leaves.
Put mixed salad ,lettuce and carrots in a bowl.

Spread chickpeas on it, then layer raw mango, tomato and onions on it. Also sprinkle some salt,lemon juice, chopped mint and red chili powder between layers.

Keep cooked chicken pieces on top and garnish with mint.
