Salmon cooked with cumin spice rub served with orange sauce. A delicious recipe for quick dinners and lunches.

Ingredients

  • Salmon with skin  300-400 g
  • Orange  2
  • Lemon juice  1 tsp
  • Coriander chopped  2 tsp
  • Salt as required
  • Cooking oil  7-8 tbsp
  • Mix salad for serving, cabbage purple and green, carrots and red onions.

List 2 spice rub

  • Cumin powder  1 tbsp
  • Kashmiri red chili powder  1/2 tbsp
  • Red chili flakes  1/2 tsp
  • Coriander powder  2 tsp
  • Salt  1/4 tsp

Mix all list 2 spices in a bowl and set a side. We will put this spice rub on salmon later.

Take salmon, sprinkle with salt both sides.

Heat a non stick frying pan. add in 7-8 tbsp oil and place salmon skin side down on it. Now cook it on high heat.

When skin is nicely crisp, turn it and cook until nicely cook through. For this size, almost 5 minutes.

Turn the heat on low.Now spread the spice rub on cooked pieces. No need to use all spice rub. Use almost 1-1/2 tbsp.

Turn and cook the fish with spices on low heat for 1 minute almost. Do not burn the spices or it will taste burnt.

Turn the heat off, take out the salmon and place it on serving plate. Keep it warm until we make orange sauce.

Same pan with remaining juices of salmon, add in 1-1/2 orange juice, lemon juice and salt according to your taste.

Mix and cook on low heat and reduce the sauce a bit. Then add orange segments from 1 orange and a bit chopped coriander. Mix and turn off the heat.

Pour the sauce with orange segments on salmon. Sprinkle with a bit with chopped coriander. Serve with finely shredded salad.
