Pad Thai Recipe

Pad thai, or phad thai, is a stir-fried rice noodle dish commonly served as a street food and at most restaurants in Thailand.

Pad thai is made with  rice noodles, which are stir-fried with eggs and chopped  tofu, and is flavored with tamarind pulp, fish sauce, garlic or shallots, red chili pepper and palm sugar and served with lime wedges and chopped roasted peanuts. It may contain other vegetables like bean sprout, garlic chives. It may also contain fresh shrimp, crab, squid, chicken or other meats. Many of the ingredients are provided on the side as condiments such as the red chili pepper, lime wedges, roasted peanuts, bean sprouts and other fresh vegetables.

If you don’t want to use prawns and tofu then add in chicken 300 g in this recipe.Vegetarian versions may substitute soy sauce for the fish sauce and leave the shrimp or prawn.

Ingredients

  • Rice Noodles  350 g
  • Tiger prawns  300 g
  • Tofu    200 g
  • Garlic chopped  1-1/2 tbsp
  • Green onion  2-3
  • Beans sprout   250 g
  • Eggs  2
  • Fresh coriander chopped  2-3 tbsp
  • Tamarind pulp   5-6 tbsp  
  • Fish sauce  2 tbsp
  • Dark soy sauce  4 tbsp
  • Red chili flakes  3 tsp
  • Salt   1-2 tsp or as required
  • Sugar  2 tsp
  • Lime  1
  • Roasted chopped peanuts  1/4 cup

Take a deep pan or bowl, place rice noodles in it.

Fill the pan with hot boiling water.

Cover it with foil or any lid for 10-15 minutes almost.

Check it, if you feel keep it for more 5 minutes.

Drain it. Wash it with cold water and apply 2 tbsp oil.
Set aside.

Gather all ingredients at one place.

Heat a wok, add 2 tbsp oil and chopped garlic.Stir few seconds.

Add in prawns with pinch of salt.

Stir and cook until they turn pink in colour for almost less than a minute.

Take out, set a side

Now same pan, heat 1 tbsp oil. Beat 2 eggs with a pinch of salt. Add in.

Mash and cook. Then take out in a plate.

Now same wok, add in 1 tbsp oil, tofu cut in small cubes, red chili flakes and 1/4 tsp salt.

Stir and cook until tofu is slightly golden in colour.

Add in cooked prawns and eggs on it. Mix well.

Add in rice noodles, beans sprout, green onion, salt, soy sauce, fish sauce, tamarind pulp, sugar.

Mix well, taste salt and spice. If need some more, add more.

Sprinkle fresh coriander and peanuts on top before serving.

Serve Pad Thai with lime.
