Cholay kulchay Recipe

Cholay Kulchay is a traditional Pakistani Punjabi street food. It is also a vegan recipe. Tender succulent chickpeas curry slow cooked with lots of spices ,flavored with tamarind, cinnamon, cumin, fennel, black rock salt, mango powder, coriander and lots of other spices. You will not forget the flavour if you try it just once. 

 Kulchay is type a flat bread made of flour. Traditionally it is baked in tandoor oven. Basic dough is same but you can make it in different flavors, topped it with different  things like garlic, coriander, sesame seeds, black seeds.I am making garlic coriander kulchay and cooked them on stove. Very easy and quick recipe.

So together these both make a wonderful combination Cholay Kulchay. A complete satisfying meal. Serve it with thinly sliced raw onion to make it more appetizing.

Ingredients

List 1,

  • Chickpeas  250 g
  • Red lentil/Masoor dal  1/3 cup
  • Fresh coriander for garnish
  • Fenugreek leaves  1 tsp
  • Tamarind pulp  3-4 tbsp
  • Lemon juice  1-2 tbsp
  • Oil  1/4 cup
  • Caraway seeds  1 tsp
  • Asafoetida   a pinch
  • Ginger  2 inch piece (paste)
  • Garlic  3 cloves (paste)
  • Soda bicarbonate  1/2 tsp
  • Salt  as required

List 2,

  • Black tea  2 tsp
  • Cinnamon stick  1
  • Big cardamom  2
  • Small cardamom  4-5
  • Cloves  4-5
  • Bay leave  2

List 3,

  • Kashmiri red chili powder  1 tsp
  • Cumin powder  1 tsp
  • Coriander powder  1-1/2 tsp
  • Garam masala powder  1 tsp
  • Black rock salt  1/2 tsp
  • Turmeric powder  1 tsp
  • Fennel powder  1 tsp
  • Mango powder/Amchoor powder  1 tsp

Directions,

Soak chickpeas all night. In morning throw all water, wash them nicely.

Now with in a pan add fresh water, chickpeas and red lentil/masoor dal and 1/2 tsp soda bicarbonate. Turn on the heat.
(Do not add too much water, add in almost 2 inch above the lentils)

Let it boil, you will see this white foam will come on top. Take this foam out with spoon and throw it.

In a muslin cloth add all list 2 ingredients.

Make a bag.

Add this bag in your chickpeas and let them cook on slow heat until nicely tender.

After almost 1 hour you will see it like this. Now throw this spice bag.

Heat a wok, add 1/4 cup oil with asafoetida, ginger, garlic paste, caraway seeds(ajwain). Stir few seconds.

Now add in all list 3 ingredients.

Stir few seconds. Make sure do not burn it. If you feel it is burning then add few tablespoon water in it.

Add these cooked spices in cooked chickpeas. Mix well.

Now add tamarind paste, lemon juice, dried fenugreek , fresh chopped coriander, salt and mix well.
Taste salt and tamarind paste, if need add more according to your taste.

Cover and let it cook on low heat for 10 minutes almost.
