Ragra Patties (chat with aloo kebab and channa curry)

Ragda Patties is India’s most famous street food. Potato patties with chickpea curry and different style of chatnies like hari chatni, imli chatni and yogurt chatni and lot of raw onions and crispy papri on top….just wowwww and amazing chatpata flavors . Make it just once and I am sure you will not go for another chat recipe ūüôā

Ingredients,

For aloo kebab (potato patties)—List 1

  • Boil potatoes ¬† 1 kg
  • Salt ¬†1-1/2 ¬†tsp ¬†or as required
  • Green chilies chopped ¬†1 tbsp
  • Fresh coriander chopped ¬† 1/2 cup
  • Fresh mint chopped ¬†1/4 cup
  • Red chili powder ¬† 1 tsp
  • Lemon juice ¬† 3-4 tbsp

For Channa gravy (chickpea gravy)— List 2

  • Boiled chickpea (channa) ¬† ¬† 2-1/2 cup
  • Onion ¬†1
  • Tomato ¬†1-1/2
  • Cumin seeds ¬†1 tbsp
  • Garlic paste ¬†1 tsp
  • Crushed red chili ¬† 1 tbsp
  • Salt ¬†1 tsp
  • Red chili powder ¬†1 tsp
  • Coriander powder ¬†1-1/2 tsp
  • Turmeric powder ¬†1/2 tsp
  • Lemon juice ¬†5-6 tbsp
  • Garam masala powder ¬† 1/2 tsp

For Hari Chatni —List 3

  • Fresh coriander ¬†a hand full
  • Fresh mint ¬†a hand full
  • Green chili ¬†1
  • Garlic cloves ¬†2
  • Cumin seeds ¬†1 tsp
  • Black salt ¬†1/2 tsp
  • Tamarind pulp ¬† ¬†4 tbsp

For Imli meethi chatni—List 4

  • Tamarind pulp/ imli pulp ¬† 1cup
  • Sugar ¬†3/4 cup
  • Red chili powder ¬†1-1/2 ¬†tsp
  • Salt ¬†1/2 tsp or as required
  • Ginger powder /sonth ¬† 1 tsp
  • Cumin powder ¬†1 tsp
  • Water ¬†1 cup

For yogurt sauce — list 5

  • Yogurt ¬† 250 g
  • Black salt ¬†1/2 tsp
  • Cumin powder ¬† 1 tsp

Other Ingredients— List 6

  • Papri ¬†as required
  • Sev as required
  • sliced onion ¬†as required
  • Chat masala as required

Directions,

For Potato Patties
1. Add all list 1 ingredients in a bowl.

3. Make small patties ..roll in some plain flour. set aside.

4. Fry them with 4-5 tbsp oil.

For Chickpea Gravy

1. Take 3-4 tbsp oil in a pan add 1 tbsp cumin seeds. Cook until they starts to crackle
2. Add 1 tsp garlic paste. stir few seconds.
3. Add finely chopped onion and 1 tbsp crushed red chili. Cook for 1 minute.
4. Now add 1-1/2 tomatoes..(blend tomatoes and use them).

5. Add 1 tsp salt, 1/2 tsp red chili powder, 1-1/2 tsp coriander powder, 1/2 tsp Turmeric.
6. Stir and cook until you see oil with sides of pan.
7. Add boiled chickpeas. mash them a little.
8. Add 1 cup water and garam masala 1/2 tsp and let it cook for 10-15 minutes until slightly thick.

9. Add 4-5 tbsp lemon juice, sprinkle fresh coriander. Turn off the heat.

For hari chatni

In a chopper add all above list 3 ingredients with 1/4 cup water.

Chop it fine ,hari chatni is ready.

For Imli Chatni

1. Take all above ingredients in a pan and cook them until slightly thick... keep them in a clean jar after cooling it completely... you can keep this in fridge for 2-3 months.

try not to make it too thick because this will be more thick after some time. Imli meethi chatni is ready.

For yogurt sauce

Mix yogurt 250 g, black salt 1/2 tsp , cumin powder 1 tsp …mix well yogurt sauce is ready.

Keep potato Patties in a plate...pour some chickpea gravy on it.
