Degi Mutton Qorma

Here i am showing you how to make degi mutton qorma, its a beautiful aromatic degi recipe, once you make it you will not go for another mutton qorma recipe ,my family love this qorma and i am sure all of you will like it as well.

Serving= 4-5 persons

Ingredients,

  • Baby lamb or goat meat with bones  500 gm
  • Onion 2 medium
  • Oil 1/2 cup
  • Yogurt  1/2 cup
  • Salt   1 tsp or as required
  • Garam masala powder 3/4 tsp
  • Tumeric powder 1/2 tsp
  • Whole kashmiri red chilies 3
  • White vinegar 1/2 tbsp
  • Whole coriander seeds  1 tbsp
  • Whole cumin seeds  1/2 tbsp
  • Garlic cloves  6-7
  • Ginger 1 inch piecs
  • Almonds 9-10
  • Poppy seeds  1 tsp
  • Caraway seeds (kala zeera)  1/2 tsp
  • Whole small cardamom  4-5
  • Kewra water  1 tbsp

Directions,

1. Take 9-10 almonds, 1 tsp poppy seeds, 1/2 tsp caraway seeds and 4-5 small cardamom.

3. Take 3 dried Kashmiri red chilies, boil them for 5-6 minutes with 1/2 tbsp white vinegar and 1/4 cup water.

4. Now in a blender add these boiled chilies and ginger ,garlic, whole coriander and grind it with some water very fine. set a side.

6. heat 1/2 cup oil in a pan, you can also make it with desi ghee for more perfect and aromatic taste but i am making this with oil. so add 2 finely sliced onion in it.

7. fry onions until light brown. try not to burn your onions because then gravy will be bitter and in dark colour.

8. now turn off the heat and add meat, beaten yogurt, and chili garlic paste we made in blender. mix well. now turn on the heat and start cooking and stir on medium heat. why i turn off the heat at that time because if i add yogurt at that time, yogurt will curdle.

9. Mix and cook until you see oil with the walls of pan.

10. add water 2 cups and let it cook with lid for 1 hour 15 minutes, almost 80% done.

11. when its 80% done add grind almonds, poppy seeds etc ,we made a beginning. and add 1 tsp garam masala and 1 tbsp kewra water. stir and with lid again cook it on very low heat for 20-25 minutes. if you feel its burning from bottom add a little hot water.

qorma is ready, serve it with naan and garnish it with fresh ginger julian if you like.
