How to do quick and easy dinner preparation

Last Saturday I invited our very good family friends and made this dinner for them.So many things were going on at same time that day so couldn’t take pictures 🙂

Also some times it feel very odd in front of guests with that big DSLR  😛 and sometime without any reason I just don’t want to take pictures :/ ….

So no proper pictures of this post but I still want to write it for all of you because our guests have some food allergies with onion and garlic,  I made this dinner with out these vegetables. I hope it will help all of you for arranging dinner for your loved ones with these kind of allergies.

Menu was really simple

  1. Mator Pulao (Peas Pulao)
  2. Chicken Tikka Masala
  3. Achari Aloo (Achari Potato)
  4. Chicken Reshmi Kebab
  5. Roasted Chops
  6. Potato Spinach Kebab
  7. Malai Boti
  8. Fresh Salad 
  9. Cumin Raita 

Now I will explain 1 by 1 how I made all these recipes , some are in website I already shared before and some I am giving here with out pictures.

1. Mator Pulao (Peas Pulao)

Soak 3 cups of good quality Basmati rice for 15 minutes. Now Take a big pot add 1/4 cup oil in with 1/2 tbsp ginger paste. Stir few seconds then add 4 tomatoes (blend them in fine paste before adding). Also add 1 big cardamom, 1 two inch cinnamon stick, 1 tsp Kashmiri red chili, 2 tsp coriander powder, 1 tbsp whole cumin. Stir it on high heat until you see oil with sides of pan. Now add 1-1/2 cup peas (I used frozen), stir for 1 minute add 1/4 cup water and let them cook for a while. Now add 5 cups water ,2 tsp salt, 1 tbsp chicken powder let it boil. When it comes to a full boil , take out all water from soaked rice and put rice in boiling water. Let it cook until all water evaporates from rice. Now on very low heat with lid on give it 10 minutes dum. Mator Pulao (Peas Pulao) is ready to serve.

2. Chicken Tikka Masala

In a wok add 4-5 tbsp oil with 1/2 tbsp ginger paste,stir it few seconds then add almost 400-500 g chicken boneless (cut in small cubes). Stir it on high heat until all extra water from chicken evaporates and colour of chicken change. Now add 1 tbsp ready made tikka masala powder (add more if you like spicy), stir few more seconds then add 250g yogurt mix well and let it cook on low heat until chicken is fully done almost for 5-7 more minutes. Now add 1/4 cup fresh cream ,mix well and leave it to cook on low heat with lid on for few minutes. Its done ,taste salt add more if you want ,garnish with fresh coriander.

3. Achari Aloo (Achari Potatoes)

Super easy recipe 🙂 …… take 4 medium boiled potatoes cut them in cubes add in a pan with 1 cup of water, 1 tsp salt, 1-1/2 tbsp tomato puree, 1 tbsp Achar Gosht Masala (I used National achar gosht masala) let it boil on high heat then turn the heat low and cook it for 10 more minutes. Garnish with fresh coriander its done.

4. Chicken Reshmi Kebab

Take a small bread, chop 4 slices of it in a chopper. add these bread crumbs in a bowl with 500 g chicken mince, 1 tsp salt, 1 tsp red chili flakes, 1 tsp whole cumin, 1 tsp crushed cumin, 1/4 cup fresh chopped coriander, 2 tsp coriander powder, 1/2 tbsp chicken powder, 2-3 tbsp fresh cream, 1 tbsp lemon juice, mix well and make kebabs of your choice. Shallow fry them in fry pan.

5. Roasted Chops

1 kg Lamb chops, 1/2 tsp salt, 4 tbsp dark soy sauce, 4 tbsp Chili sauce, 1 tbsp sugar, 1 tbsp oyster sauce, 3 tbsp rice vinegar,1/2 tbsp ginger paste, 1 tbsp cornflour , 1/2 cup water. Mix all these ingredients and cook in a pan for 25-30 minutes. Add 2 tbsp BBQ sauce, mix well. Now keep them on a oven proof tray and cook in a preheated oven at 180 C for almost 20 minutes. Take out and serve.

6. Potato spinach kebab (Recipe here) Same recipe I followed but without onions.

7. Malai boti (Recipe here) Same recipe I followed but with out garlic and didn’t have skewers so cook these in pan as it is.

8. Salad was simple mix of iceburg lettuce, carrots and cabbage.

9. Cumin Raita

250 g yogurt, 1/4 tsp salt, 1 tsp crushed cumin, 1/2 tsp chat masala. Mix well and serve.

10. Dessert was not home made ,it was Sainsburys sticky toffee pudding with vanilla icecream.
