Focaccia bread or Fougasse bread is a flat oven-baked Italian bread same in style and texture to pizza dough. Focaccia can be used as a side to many meals or as sandwich bread. Focaccia al rosmarino is a common focaccia style in Italian cuisine that may be served as an appetizer, table bread, or snack.
I am making Tandoori chicken with caramelized onions and mint Focaccia because I love these flavors.
In a pan add 1 tbsp oil with boneless chicken cubes, garlic paste and tandoori masala.

Cook until chicken is tender.

Take out chicken in a plate and put onions in same pan.

Cook on medium heat for 3-4 minutes.

Keep chicken, caramelized onions and chopped mint in a plate. Use it when cool.
Now for focaccia Dough

In a mixer bowl add in strong white flour, yeast, salt.

Run the mixer for few seconds, then add in almost 1/2 pint warm water while the mixer is running. (Amount of water can change because of different brands flour)

Run the mixer on speed 2-3 for 10 minutes almost. You will get a very soft dough like shown in picture. Then add in 4-5 tbsp olive oil and again run the mixer until mix well.

Now cover the dough and let the prepared dough rise for 1 hour or until double in size.

You can see dough is nicely risen.

Cut the dough in 2 parts. Knead it lightly for few seconds.

Dust 2 deep rectangular tins with semolina.

Take 1 dough ball. Pushing and pulling with your hands make it tin shaped and place in tin. Push the dough with your fingers like shown in picture.

Now sprinkle a generous amount of extra virgin olive oil on it.

Break chicken pieces in small parts then push them into the dough with fingers, sprinkle caramelized onions and mint on top.Sprinkle some sea salt on top if you want.

Now cover the focaccia with cling film and let it rise again for half hour. Then sprinkle again with some extra virgin olive oil.

Bake in a preheated oven at 200 C for 8-10 minutes then tun the oven heat down at 180 C and cook further 10-15 minutes almost or until done.
