Sindi Style Fried Brinjal with tomatoes,chilies and raw Mango Recipe

Sindh is a Provence in Pakistan. My childhood memories belong to this beautiful place. I remember my mom used to make sindhi style food a lot. Although we are Punjabi but almost all my family live in Sindh. So my daily recipes are inspired by those sindhi style foods a lot. 

This Brinjal also called eggplant recipe is what my family make almost once in a week. All of my aunties and mom have different versions of making this delicious dish. Some like it more crispy, some like to make it on a flat roti pan, some like it more spicy and sour. Also spice mix they use is a little bit different from each other. But all of them are perfect and yum. 

So here is my version of this classic, flavorful sindhi style fried brinjal with tomatoes and chilies recipe. With exotic blend of spicy and sour spice mix, veges will taste awesome. 

Serve it with fresh homemade roti and onion salad.

Ingredients

List 1,

  • Brinjal small  8-9
  • Green chilies  4-5
  • Tomatoes  3-4
  • Raw mango 1
  • Lemon  1
  • Fresh coriander as required

List 2,

  • Black rock salt  1/2 tsp
  • Cumin powder  1-1/2 tsp
  • Coriander powder  1-1/2 tsp
  • Kashmiri red chili powder  1 tsp
  • Turmeric powder  1/2 tsp
  • Mango powder  2 tsp
  • Salt  1/2 tsp or as required

Gather all list 2 ingredients in a bowl or bottle.

Mix well. Our spice mix is ready for vegetables. Set a side.

Wash and dry all vegetables.

Cut brinjals in half then give deep cuts inside them. This will help later to go spices inside nicely.

Cut tomatoes in half, raw mango length wise. Cut green chilies from middle length wise. Take out the seeds and throw them. Finely chop coriander.

Fill almost 1/2 tsp spice mix in each chili. Set a side.
Reserve the remaining spice mix for other veges.

Now heat 3-4 tbsp oil in a pan. Place brinjals white sides downwards. Cook on medium heat for 5-6 minutes.

Turn them and cook on same medium heat for 7-8 minutes. Add in 3-4 tbsp oil if you want them crispy.

Now sprinkle spice mix on all brinjals on the side which we gave cuts.

On high heat turn them and cook for less than 1 minute. Do not burn the spice mix. Take them out in a plate.

Now same pan, add in tomatoes, chilies, raw mango with 1 tbsp oil. Cook on medium heat for almost 7-8 minutes. Then sprinkle spice mix on them.

Slide tomatoes,chilies and raw mango on 1 side and place brinjals on other side. Sprinkle some lemon juice and coriander. Some salt if required.
Leave it on medium heat for 1-2 minutes and it is done.

Serve with homemade roti and onion salad.

  1. Hey Annie, is there any alternate for raw mango? I don’t have it.
