Red Velvet Cheese Cake Recipe

This Red Velvet Cheesecake Cake recipe has layers of moist red velvet cake and creamy cheesecake, covered in White Chocolate Whipped cream Icing. This is the easiest cheese cake recipe you can make.

Tips:

  1. If you do not have mascarpone cheese, use cream cheese instead.
  2. All ingredients of cheese cake should be on room temperature.
  3. After baking do not touch your cheese cake for several hours. Let it cool completely before cutting it.

Ingredients

For Cheese Cake,

  • Mascarpone Cheese   250 g
  • Cream Cheese  600 g
  • Whole eggs  2
  • Egg yolks  2
  • Zest of 1 lemon 
  • Juice of 1 lemon
  • Plain flour  4 tbsp
  • Caster sugar  175 g

For White Chocolate whipped cream icing,

  • Double cream  300 g
  • White chocolate  100 g

Preheat your oven at 160 C.
Grease and line a 9 inch round pan with parchment paper.

In a bowl of a stand mixer add in 2 whole eggs and 2 egg yolks with caster sugar.

Start beating it with paddle attachment.

Beat until fluffy.

Add in all cream cheese and mascarpone cheese.

Beat until nicely mix.

Sift 4 tbsp flour on it.

Add lemon juice and lemon zest. Beat until nicely mix on low to medium speed. Do not over mix.

Pour the batter into the prepared tin. Bake at 160 C for 30 minutes. Turn off the oven and with out opening the door keep it inside for 10 minutes.
Total 40 minutes. Then take out.

Let it cool for 4-5 hours nicely. Then keep in fridge for 5-6 hours. After this cut or use it because if you cut it before this, it will loose all its shape.

Now Make White Chocolate Whipped Cream Icing

In a bowl add broken white chocolate pieces with 4 tbsp double cream.

Melt it on bain marie or microwave. Let it cool a bit then mix it in cold double cream.

Beat it until stiff peaks. Set a side.

Now for Layering

Cut the red velvet cake in half.

Take out the cheese cake from pan.

Place 1 layer of cake in pan.
