Potato Curry (Vegan, Fat Free, Gluten Free)

The simplest 1 step potato curry which is vegan, fat free and gluten free yet so tasty and easy that you want to make it every day.

Curry is one of those meals that I just can’t get enough of. The combination of healthy veggies and aromatic spices, simmered in a spiced gravy- I mean, what else you want 🙂 I made this recipe specially for those busy days when you want a perfect meal in no time and no fuss.

Ingredients

  • Potato medium  4
  • Tomato puree  1 tbsp
  • Garlic paste  1/2 tbsp
  • Salt  1/2 tsp
  • Red chili powder  1 tsp
  • Turmeric powder  1 tsp
  • Coriander powder  1 tsp
  • Cumin powder  1tsp
  • Garam masala powder  1/2 tsp
  • Fresh green chili 1
  • Fresh coriander for garnish 
  • Lemon juice  1-2 tbsp

Peel and wash 4 medium potatoes.

Cut these potatoes roughly in small pieces. Put these in a cooking pan with tomato puree, garlic paste, cumin powder, turmeric powder, chili powder, salt, coriander powder and garam masala powder.

Now put water just enough to cover the potatoes and let it boil. Then cook on low heat until potatoes are nicely tender.

When potatoes are nicely tender, mash them with a spoon, some potatoes as big chunks.

Now add some hot water and make gravy to your choice. Add in lemon juice and taste salt.
