Dahi Vada a traditional Pakistani/Indian appetizer having all sweet and sour flavors,and fresh ingredients made with urad dal, yogurt and different styles of chatni/sauces

For Dahi Vada
Ingredients,list 1
- urad dal 1/2 cup
- salt 1/2 tsp
- red chili powder 1/4 tsp
- whole cumin 1/2 tsp
- oil for frying
list 2, for yogurt mixture
- yogurt 500 gm
- sugar 2 tsp
- salt 1/4 tsp
- corn flour 1 tsp
- roasted cumin powder 1 tsp
- water 1/4 cup
Directions,
2. Take out water, grind it very fine with 1/4 cup water…try not to add to much water in it. make the paste thick.
3. add in salt 1/2 tsp, red chili powder 1/2 tsp, whole cumin 1 tsp
4. beat it with hand beater for few minutes.
6. fry for 1 minute take them out.
8. add them in a bowl full of water direct from frying.
9. take out 1 by 1 ,press with hands ,squeeze out all excess water, set a side.
Chatni No 1. Green Sauce/Hari Chatni
Ingredients,
- Fresh green coriander 1 medium bunch (use it with stems)
- garlic clove 1 small
- green chili 3-4 (add less if you like less spicy)
- onion 1 small
- whole cumin 1 tsp
- salt 1/2 tsp or as required
- sesame seeds/til 1-1/2 tsp
- oil 2 tbsp
- water 1/4 cup
- tamarind pulp 2 tbsp
Directions,
chop them fine.
Chatni No 2. Imli Khati Chatni/Tamarind Sour Sauce
Ingredients,
- Tamarind pulp 1 cup (how to make tamarind pulp see below)
- white cumin roasted whole 1 tbsp
- salt 1-1/2 tsp
- red chili flakes 1 tbsp (add less if you want less spicy)
- water 3/4 cup
- dry pomegranate powder/anar dana powder 1 tsp

Chatini No 3. Khajor ki Meethi Chatni/Lal Chatni/ Date Sweet Chatni
Ingredients,
- dated seed less 10-12
- brown sugar 4 tbsp
- red chili powder 1 tsp level
- ginger powder/ sonth 1/2 tsp
- tamarind pulp 3-4 tbsp/1/2 cup
- cumin powder 1 tsp
- red food colour 1/4 tsp or as required
- water 1-1/2 cup

2. grind all ingredients except red food colour.
3. grind them fine.
4. cook them until slightly thick. at end add red food colour let it cook for 1 minute then take it out and let it cool .
Chatni No 4 . Tamarind Sweet Sauce/Imli Meethi Chatni
Ingredients,
- tamarind pulp/ imli pulp 1cup (how to make tamarind pulp see below)
- sugar 3/4 cup
- red chili powder 1-1/2 tsp
- salt 1/2 tsp or as required
- ginger powder /sonth 1 tsp
- cumin powder 1 tsp
- water 1 cup

How to make tamarind pulp for all above sauces
2. add 4 cup hot water in it. keep it on high in microwave for 2 minutes. now let it cool for 1 hour.
3. after 1 hour sieve it while rubbing it properly. throw all seeds.
4. tamarind pulp is ready you can see its thick not runny and thats exactly how tamarind pulp should be.
