Dahi Vada with Imli meethi chatni,Hari chatni, Imli khati chatni, Khajor meethi chatni/lal chatni

Dahi Vada a traditional Pakistani/Indian appetizer having all sweet and sour flavors,and fresh ingredients made with urad dal, yogurt and different styles of chatni/sauces

For Dahi Vada

Ingredients,list 1
  • urad dal  1/2 cup
  • salt 1/2 tsp
  • red chili powder 1/4 tsp
  • whole cumin 1/2 tsp
  • oil for frying
list 2, for yogurt mixture
  • yogurt  500 gm
  • sugar 2 tsp
  • salt 1/4 tsp
  • corn flour  1 tsp
  • roasted cumin powder  1 tsp
  • water 1/4 cup

Directions,

1. Take urad dal 1/2 cup,soak it for 6-7 hours. 2. Take out water, grind it very fine with 1/4 cup water...try not to add to much water in it. make the paste thick. 3.now mix all list 1 ingredients in it. 4. beat it with hand beater for few minutes.

10. add all above list 2 ingredients in a bowl, beat them well, then add urad dal vada we made …add 4 types of chatni, fresh coriander and freshly chopped onion. serve… see below for all 4 chatni/sauce recipes.

Chatni No 1.  Green Sauce/Hari Chatni

Ingredients,

  • Fresh green coriander   1 medium bunch (use it with stems)
  • garlic clove  1 small
  • green chili  3-4 (add less if you like less spicy)
  • onion  1 small
  • whole cumin  1 tsp
  • salt  1/2 tsp or as required
  • sesame seeds/til  1-1/2 tsp
  • oil  2 tbsp
  • water  1/4 cup
  • tamarind pulp  2 tbsp

Directions,

1. Add all above ingredients in a chopper. chop them fine.

Chatni No 2. Imli Khati Chatni/Tamarind Sour Sauce

Ingredients,

  • Tamarind pulp  1 cup  (how to make tamarind pulp see below)
  • white cumin roasted whole  1 tbsp
  • salt  1-1/2  tsp
  • red chili flakes  1 tbsp (add less if you want less spicy)
  • water  3/4 cup
  • dry pomegranate powder/anar dana powder  1 tsp

Directions,

1. add all above ingredients in a grinder, grind then very fine. sauce is ready you can use it with chats, BBQ, Dahi vada.

Chatini No 3. Khajor ki Meethi Chatni/Lal Chatni/ Date Sweet Chatni

Ingredients,

  • dated seed less  10-12
  • brown sugar  4 tbsp
  • red chili powder  1 tsp level
  • ginger powder/ sonth 1/2 tsp
  • tamarind pulp  3-4 tbsp/1/2 cup
  • cumin powder  1 tsp
  • red food colour  1/4 tsp or as required
  • water  1-1/2 cup

Khajor ki lal chatni, date sauce ,Meethi chatni for dahi vada copy

1. Take seed less dated.
2. grind all ingredients except red food colour.
3. grind them fine.
4. cook them until slightly thick. at end add red food colour let it cook for 1 minute then take it out and let it cool .
Date sweet sauce is ready, you can keep this in a clean jar and keep this in fridge for 2-3 months.

Chatni No 4 . Tamarind Sweet Sauce/Imli Meethi Chatni

Ingredients,

  • tamarind pulp/ imli pulp   1cup  (how to make tamarind pulp see below)
  • sugar  3/4 cup
  • red chili powder  1-1/2  tsp
  • salt  1/2 tsp or as required
  • ginger powder /sonth   1 tsp
  • cumin powder  1 tsp
  • water  1 cup

Directions,

1. Take all above ingredients in a pan and cook them until slightly thick... keep them in a clean jar after cooling it completely... you can keep this in fridge for 2-3 months.

try not to make it too thick because this will be more thick after some time. Imli meethi chatni is ready.

How to make tamarind pulp for all above sauces

1. take Tamarind in a bowl 2. add 4 cup hot water in it. keep it on high in microwave for 2 minutes. now let it cool for 1 hour. 3. after 1 hour sieve it while rubbing it properly. throw all seeds. 4. tamarind pulp is ready you can see its thick not runny and thats exactly how tamarind pulp should be.

      Yes you can freeze them. Fry them then let them completely cool at room temperature. Keep them in freezer bag and freeze.
